Courgette salad with white cheese: a light, quick and delicious solution, ideal as an appetizer or accompaniment to the entire meal




A quick appetizer, few ingredients, with the freshness of lemon.

Ingredients Courgette salad with white cheese and basil:

– 1 unit of courgette cut into thin slices (see preparation)

– 1 unit of seedless pepper, chopped

– 1 lemon (zest)

– basil to taste (leaves cut into strips)

– 80 g of coarsely grated Minas fresh cheese (or ricotta).

Ingredients for the vinaigrette sauce

– 4 tablespoons of extra virgin olive oil

– 4 teaspoons of lemon (juice)

– salt to taste

– pepper to taste B

Ingredients for finishing and decorating

– basil to taste (leaves)

– extra virgin olive oil to taste

PREPARATION:

  1. Separate all ingredients and utensils for the recipe.
  2. Remove the ends of the courgettes and cut them into thin slices using a mandolin or vegetable cutter. If you prefer, use the coarse grater lengthwise to obtain long strips, discarding the core with the seeds.
  3. Wash well and let the basil leaves dry. Cut the leaves for the preparation into strips and reserve the whole ones for decoration. Leave both on a paper towel to dry completely.
  4. Grate the white cheese or ricotta on the coarse side and refrigerate until ready to serve.

PREPARATION:

Courgette salad with white cheese and basil:

  1. Place the courgette slices in a bowl.
  2. Add the chili pepper, lemon zest and basil strips. Mix well.
  3. Store the mixture in the refrigerator until ready to serve.

Vinaigrette sauce:

  1. Mix the lemon juice, extra virgin olive oil, salt and pepper in a bowl.
  2. Beat with a wire whisk until emulsified.
  3. Book.

FINALIZATION AND ASSEMBLY:

  1. Arrange the courgette slices on a serving plate in layers or divide them individually among plates.
  2. Spread the grated white cheese or ricotta on top.
  3. Decorate with basil leaves
  4. Finish the courgette salad with white cheese and basil with a drizzle of extra virgin olive oil.
