Banana pancakes with whole oats Ingredients:
– 3 pieces of large, ripe silver bananas. (or dwarf banana)
– 3 units of beaten eggs.
– 1/4 cup(s) gluten-free oatmeal
– 1/4 cup(s) gluten-free oatmeal
– 1/2 teaspoon(s) of chemical yeast THE
– ground cinnamon to taste (optional) THE
– coconut oil to taste to grease the pan. (or other option of your choice)

PREPARATION:
- This recipe uses no sugar, as the sweetness comes from the very ripe bananas.
- The yield of this recipe is 4-5 small units, 10 cm in diameter for every 2 portions.

PREPARATION:
Banana pancakes with whole grain oats:
- In a shallow dish or bowl, break the eggs, add the yeast and beat well.
- In another shallow plate or bowl, mash the banana well with a fork until no large pieces remain.
- Mix in the mashed banana and beaten eggs until well incorporated.
- Add the oats (flour + gluten-free wholemeal flakes) and ground cinnamon (optional) and mix well.
- Heat a small nonstick pan over medium/low heat and grease with coconut oil or another oil of your choice.
- Pour a portion of dough (1 ladle), but do not roll it out, leave it 10 cm in diameter and thicker.
- Reduce the heat to low and cover.
- When the pastry is golden on the bottom, turn it over using a dessert plate or cutting board and return it to the pan.
- Cover and cook over low heat for another 2 minutes or until cooked and golden on the other side too.
- Remove it from the pan and repeat the operation with the rest of the dough.
FINALIZATION AND ASSEMBLY:
- Serve the banana and wholemeal oat pancake with a side dish of your choice.
- Finish with agave syrup or sugar cane molasses (grinding honey).
- Store in the refrigerator for 4-5 days and reheat in the microwave without damaging the texture.
