Free range chicken with cassava puree
Time: 40 minutes

Ingredients:
- 4 cups cooked, shredded chicken breast
- 2 tablespoons butter
- 1 onion chopped
- 2 chopped tomatoes
- 1 can drained green corn
- Salt, black pepper and chopped parsley to taste
Puree:
- 2 tablespoons butter
- 1 kg of cooked and mashed cassava
- 1 pack of cream (200 g)
- Salt to taste
Preparation method:
- In a pan, over medium heat, melt the butter and fry the onion until soft.
- Add the tomato and sauté for 3 minutes.
- Add the chicken breast, corn and sauté for 5 minutes.
- Season with salt, pepper, parsley and set aside.
- For the puree, in a pan over medium heat, melt the butter, add the cassava and brown for 3 minutes.
- Add the cream, mix and season with salt.
- Serve the chicken with the cassava puree and, if desired, garnish with parsley sprigs.
