Fried bread ingredients – piadina

– 1 cup (s) (tea) of wheat flour + a little to sprinkle and open the dough

– 1 tablespoon (s) (coffee) of salt

– 125 ml of filtered water (a little more if necessary)

– 3 3/4 spoons (s) (soup) of pork lard

– 1/2 spoon (s) (coffee) of sodium bicarbonate (pinch) W

Pre-repair:

  1. Separate all the ingredients and tools for the recipe.
  2. The recipe for 2 portions produces 5 units with 22 cm each. The remaining bread can be frozen.
  3. This recipe can be done by hand, but it is easier in the mixer with the hook.

PREPARATION:

Fried bread – piadina (pasta):

  1. In a bowl, place the wheat flour, salt and baking soda and mix.
  2. Add the pork pivot and mix well.
  3. Add to 3/4 of the amount of water (see quantity in the ingredients) and mix well.
  4. Use a mixer to play the dough with the (optional) hook or work the dough with your hands, above the floured bench, to develop gluten (the piadina is a bread, so it must seem a little because when the mass develops gluten, spast without laceration).
  5. The dough point should be elastic, soft, humid and a little sticky. If necessary, add the rest of the water and a little more (the amount of water depends on the absorption capacity of the flour used).
  6. Grease the surface of the desk with oil or flour.
  7. Divide the mass into equal parts (5 units every 2 portions). If you have a staircase, weigh about 75 to 85 g each.
  8. Bole the dough: prepare the balls with the dough, leaving the surface very smooth and without cracks.
  9. Sprinkle some flour at the top.
  10. Cover with a plastic wrap and let the dough rest on the bench for 15 minutes.

Frying bread – Piadina – Model:

  1. Put the dough of 1 unit on an open and raged plastic bag.
  2. Beat the dough in the upper part.
  3. Take a plate or refractory of the round glass, reveal it with the other part of the plastic bag.
  4. With the plate or refractory lined with plastic, tighten the dough, forming a disc.
  5. Then remove plastic from the top, leaving the bread only with lower plastic.
  6. Remove and adjust the hand shape – making discs of 22 cm in diameter and thin thickness (without, however, leaving the transparent mass).
  7. Keep plastic at the bottom.
  8. Follow the previous steps for the rest of the dough, stacking the bread and has always covered them from the last that has been modeled.
  9. At the end, cover the last unit with a plastic bag or film paper.
  10. Grill ahead (this dough will moisten the raw refrigerated).

Fried bread – piadina – grilling (from 4 to 5 minutes per disc):

  1. Heat the iron/grids or the non-stick pan or the pan over medium-high heat.
  2. Grease with a little oil, use a brush or paper napkin to avoid accumulated fat.
  3. Lower the medium-low heat, wrap plastic leaving only one end.
  4. Place the disc in contact with the plate or pan (plastic will be at the top).
  5. Leave a few seconds, preventing the plastic from contacting the plate or pan.
  6. Remove the plastic then.
  7. Cook/grill: once some bubbles were formed at the top and are cooked at the bottom and slightly golden (estimated 2 minutes), turn to cook on the other side and left for another 2 minutes (the dough should not be crunchy and yes soft ).
  8. Remove from the heat, rest on a grid and finish cooking the other albums.

Finishing and assembly:

  1. Distribute the discs Frying bread – Passe – In dishes and in things you prefer.
  2. Close in half and serve immediately.
