Potato ingredients
– 2 units (s) medium potatoes

Fry ingredients with buffalo mozzarella
– 4 units (s) eggs
– Nutmego to taste W
– Go up to taste
– Pepe to taste W
– 1 tablespoon of chopped green onions
– Oil to taste
– 1 cup (s) (tea) of frozen spinach in leaves
– 150 g of sliced buffalo mozzarella
Marinated tomatoes ingredients
– 2 units (s) seedless tomatoes, cut into thin stripes
– 1/4 teeth (s) of chopped garlic
– 2 tablespoons (s) of lemon (juice)
– Go up to taste
– Pepe to taste W
– 1/4 cup (s) of extra virgin olive oil
– 2 tablespoons (s) (soup) of basil (flyers)

Pre-repair:
- Start by cooking the potatoes (see preparation).
- Put the tomatoes to marinate (see preparation).
- Separate the remaining tools and ingredients of the recipe.
- Remove the spinach from the freezer and leave to room temperature until the time of use.

- Cut the buffalo mozzarella.
PREPARATION:
Potatoes – Cooking (do this step before starting the preparation):
- Wash the potatoes, peel and cut in half towards the width.
- Put the potatoes in a pan, cover with water and bring over high heat.
- When the water boils, season with salt and cook until the potatoes are soft but stopped, without crumbling, about 15 minutes – the weather will depend on the size of the potatoes.
- Continue with the next step (Marine the tomatoes).
Marinated tomatoes (make this step before starting pre-repair):
- Wash the tomatoes, cut in half, remove and discard the seeds.
- Cut half of the tomatoes into thin stripes in the direction of the length.
- Peel the garlic and cut very thin.
- Wash the lemon and squeeze the juice.
- In a bowl, mix the lemon juice with chopped garlic, salt and pepper.
- Gradually add the extra virgin olive oil, beating to emulsify the sauce.
- Put the tomato strips in the sauce and mix well so that they are wrapped in the same.
- Cover with plastic movies and set aside.
- Continue pre-preparation (article 3).
Potatoes:
- When the potatoes are cooked, drain and wait for it to cool slightly to cut.

If you have chosen to create an appetizer or a dessert, take the time to prepare the potatoes a little.
Fried potatoes with buffalo mozzarella – potatoes:
- As soon as they are hot, cut the boiled potatoes into thin slices: be careful not to crumble.
Fried potatoes with buffalo mozzarella:
- In a bowl, beat the eggs without foam and dressing with nutmeg, salt and pepper.
- Add the chopped green onions and mix.
- Place a smaller older or more elderly pan (depending on how many french fries) with a drizzle of olive oil.
- Arrange the boiled potato slices that flank the bottom of the pan.
- Squeeze the spinach leaves to remove the excess and enlarge water on the potatoes.
- Place the Buffalo mozzarella slices at the top.
- Sprinkle with the egg mixture and bring over low heat.
- Go to cook and raise the sides of the fried food so that the eggs take the bottom. Cover for the steam of the upper part.
- If lightly cooked on the bottom and at the top are small or no fluid, fatten the larger pan with a drizzle of olive oil and bring over medium heat. If you do not have a pan that is no longer larger, use a clean and well washed table (larger than the pan).
- Suitable the larger pan (or card) than the smallest and, very carefully, turn both together.
- Bring to Fried (S) over low heat, now in the largest pan.
Marinated tomatoes:
- Mix the tomatoes and add the basil flyers.
- Reserve.
Fried potatoes with buffalo mozzarella:
- When the fried food is cooked, turn off the fire.
Finishing and assembly:
- Turn the potato with buffalo mozzarella on a serving dish or, if you prefer, divide into individual dishes.
- Place marinated tomatoes on a plate or packed on the plates, next to the fried foods.
- Finish the fried with the black pepper ground on the spot.
