Carrot is a versatile vegetable, present in the kitchen in various recipes ranging from salads to soups and even desserts. Food offers nutritional benefits, which may vary if it is consumed raw or cooked.

“Both raw and cooked carrots are healthy, but has a difference between nutrients and benefits depending on how they are consumed,” explains nutritionist Vanessa Furstenberger.

The raw is more crunchy and has more vitamin C. “If it is cooked, the availability of beta carotene increases which is an antioxidant that is converted by the body in vitamin A, but, on the other hand, it has less vitamin C, because since vitamin C is lost for the kitchen”, he adds.

Cotta carrot also has a better digestion for some people with digestive problems.
