The breakfast is the most important meal of the day and should be varied and healthy. For many, bread is almost indispensable accompaniment, either toasted with butter, filling with cheese and ham or immersed in coffee with milk.
But with so many options available on the shelves, the question arises: what is the best bread to start the day with energy and health?
According to Amanda Figueiredo, a clinical nutritionist of USP, complete natural fermentation bread is a healthier option mainly because it is easier to digest.
“Natural fermentation, which involves yeasts and beneficial bacteria, helps to break the gluten and antinutrients present in the wheat, making the bread lighter. Furthermore, this process reduces the glycemic index of bread, helping to maintain more stable glucose levels, which is beneficial for the weight and control of energy during the day”, he explains.
Since it is made with wholemeal flour, this bread is also richer in fiber, which contributes to greater satiety and better intestinal functioning. “Natural fermentation bread usually has a simpler list of ingredients, no conservative or artificial additives, unlike bread, for example, which are industrialized,” he adds.
