Ingredients for shrimp risotto
- 4 tablespoons of olive oil
- 1 medium onion, grated
- 3 peeled and seeded tomatoes, chopped
- 200 g of ready-made tomato sauce
- 1 kg of medium shrimp
- 4 cups of ready-made white rice
- Salt and black pepper to taste
- grated parmesan to sprinkle
- 1/2 cup chives (for garnish)
Method of preparation
In a pan, heat the oil, brown the onion, add the chopped tomato, tomato sauce, salt and pepper and cook for 5 minutes over medium heat. Add the shrimp, cook for another 5 minutes and add the cooked rice. Transfer to a refractory, sprinkle with grated Parmesan cheese and garnish with chopped chives.
