Raw ham – like Parma or Serrano Jamón – is a healed food, rich in proteins and some micronutrients such as zinc, iron, selenium and vitamin B12. However, since it is an ultra elaborate food with a high sodium and nitrite content, its consumption should be reduced to a minimum.

“Studies show that transformed meats are associated with the highest risk of cardiovascular diseases and colon -retto carcinoma, in particular due to the high sodium content and additives”, warns Nathalia Felix, a nutritionist and member of the Brazilian Nutrology Association scientific committee (Abran).

Whoever classifies the meat transformed as a group 1 (carcinogen for humans). “Therefore, the possible benefits are limited and do not exceed the risks if the consumption is frequent,” explains the expert.

What is the ideal quantity of daily consumption of raw ham?

There is no universal “safe dose” for transformed meat. “The international orientation is to limit as little as possible. The European guidelines (EFSA, 2023) underlines that consumption should be sporadic, with the preference to natural and less elaborate protein sources,” adds the doctor.
