Ingredients for the giant coxinha on the plate

  • 2 and 1/2 cups (tea) of water
  • 1 chicken stock cube
  • 4 tablespoons of butter
  • 1 cup of boiled and mashed potatoes
  • 2 and 1/2 cups (tea) of wheat flour
  • Salt to taste
  • butter for greasing
  • 1 yolk for brushing
  • grated parmesan to sprinkle

Filling

  • 2 tablespoons of butter
  • 1 chopped onion
  • 2 chopped seedless cherry tomatoes
  • 3 tablespoons of tomato paste
  • 800 g of cooked and chopped chicken breast
  • Salt and chopped parsley to taste
  • 2 cups (tea) of Catupiry®

Method of preparation

For the filling, heat a pan with butter over medium heat and saute the onion until golden brown. Add the tomato, remove and brown for 2 minutes. Add the chicken, salt, the green smell and sauté for 3 minutes. Turn off and let cool. In a large pot, put the water, chicken broth, butter and bring to a boil over medium heat. Add the boiled and mashed potato, flour, salt and cook, stirring until it comes off the bottom of the pan and forms a firm dough. Remove from the oven, allow to cool and spread half in a greased medium refractory. Spread the filling and the Catupiry® on top. Cover with the remaining dough, brush with egg yolk, sprinkle with Parmesan cheese and bake in a preheated medium oven for 25 minutes or until golden brown. Remove from the oven and serve immediately.
