How to keep jelly longer

We usually prepare it in small portions and store it in the refrigerator, but there is a way to extend its shelf life up to 6 months in the case of larger quantities.

It is practically a pasteurization process. You should use jars with intact lids, no dents or rust, and boil them covered with water for ten minutes. In the case of lids, five minutes are enough.

Then just let them dry on a clean cloth, first upside down and then turn them over to dry completely.

Fill the pre-sterilized jars with jam, leaving about an inch of free space to close and wipe the rim if necessary.

Seal tightly, place the jars in a large pan lined with a tea towel (so they don’t clash) and fill the jars halfway with water. Bring to a boil and leave to boil for 20 minutes.

Carefully remove the glasses from the water to avoid burns and place them on a cloth to avoid thermal shock. Leave to cool and keep in the cupboard. Once opened, keep refrigerated for up to 1 week.

ingredients

400 g of fresh or frozen berries of your choice

1 cup sugar or granulated sweetener (or sweeten to taste)

2 tablespoons of lemon juice

Method of preparation

Wash the fresh fruit well (remove the stems) and soak it in water for ten minutes.

Remove the fruit from the water (so, if there is dirt, it will remain on the bottom) and put it to drain.

Mix the fruit with the other ingredients in a pan, preferably stainless steel or non-stick. If you prefer without pieces and seeds, blend the fruit in a blender with a little water and strain.

Put on medium heat and stir with a wooden spoon until the sugar dissolves and starts forming a syrup (then you can stop stirring).

Bring to a boil, lower the heat and leave to cook, stirring occasionally and eliminating the foam that forms on the surface, for about 20 minutes or until it thickens.

Start stirring continuously until you see the bottom of the pan when you pass the spoon.

Pour still hot into sterilized glass jars with lids and seal tightly.

Invert the jars to form a vacuum and let them cool (we have already shown you how to make them last longer).

Store for up to one week in the dark and, after opening, refrigerate and consume within 5 days.

Method of preparation

Put the apple and sugar in a refractory, cover and microwave on high power for three to five minutes or until soft.

Mash well with a fork to form a puree and add the lemon juice.
