Meat with okra
Ingredients
- 500 g of beef rump dice
- 250g okra
- 1 onion peeled and chopped
- 2 cloves of garlic, peeled and crushed
- 2 seeded and chopped tomatoes
- 1 tablespoon tomato sauce
- 1 teaspoon cumin powder
- 1 cup beef broth
- Salt, ground black pepper, chopped coriander and olive oil to taste
Preparation method
In a pan, add the olive oil and place over medium heat to heat. Add the onion and garlic and brown them. Add the meat and brown until golden brown. Add the tomato and tomato sauce and mix. Cook for 10 minutes and cover with the meat broth. Cover the pan and cook for another 40 minutes. In the meantime, using a knife, cut the okra into small pieces. When the meat is tender, add the vegetables to the pan and cook for 15 minutes. Serve then.
Tip: serve decorated with mint leaves.
Caruru
Ingredients
- 1kg chopped okra
- 100 g of shelled and roasted peanuts
- 100 g of dried shrimp
- 1/2 cup palm oil
- 250ml coconut milk
- 2 onions peeled and chopped
- Juice of 1 lemon
- Salt to taste
Preparation method
Place half the prawns and the water in a blender and blend until you obtain a smooth consistency. Sift and reserve only the broth. Still in the blender, add the shrimp broth, onion, coconut milk and peanuts and blend until you obtain a creamy consistency. Book.
In a skillet, add the okra, remaining shrimp, and lemon juice and stir to combine. Add the mixture with the reserved shrimp broth and palm oil and mix. Season with salt and black pepper and cook over medium heat for 25 minutes, stirring constantly. Serve then.
Okra rice with peppers and bell peppers
Ingredients
- 1 cup rice tea
- 200 g of Calabrian sausage cut into thin slices
- 1 cup okra, sliced
- 1/2 cup red bell pepper, cut into strips
- 1/2 cup yellow bell pepper, cut into strips
- 1/2 onion chopped
- 2 cloves garlic, minced
- 2 tablespoons of olive oil
- 2 teacups of water
- Salt and ground black pepper to taste
Preparation method
In a pan, heat the olive oil over medium heat and brown the sausage until lightly browned. Add the onion and garlic, sautéing for 3 minutes. Add the peppers and okra, stirring for 3-4 minutes over medium heat. Add the rice, mix well and season with salt and black pepper. Add the water, cover the pan and cook over low heat until the rice is tender and the water has evaporated, about 15 to 20 minutes. Turn off the heat and leave the pan covered for 5 minutes before serving so that the rice loosens.
Breaded okra
Ingredients
- 300 g of okra sanitized and cut into pieces
- 300 g of corn flour
- 2 eggs
- Salt and ground black pepper to taste
- Frying oil
Preparation method
Place the eggs in a container and, using a fork, beat them until you obtain a smooth mixture. In another container, add the cornmeal, salt and black pepper and stir to combine. Then dip the okra in the eggs and then in the corn flour. In a pan, heat the oil over medium heat and fry the breaded okra until golden brown. Drain excess oil on absorbent paper. Serve then.
Warm okra salad
Ingredients
- 1 cup okra, sliced
- 1 cup cherry tomatoes cut in half
- 2 tablespoons of olive oil
- 1 clove of minced garlic
- Leaves basilsalt and ground black pepper to taste
- 1 teaspoon lemon juice
Preparation method
In a pan, heat the olive oil over medium heat and sauté the garlic until lightly browned. Add the okra and sauté for 5-6 minutes, until starting to soften. Add the cherry tomatoes and continue to fry for another 2 or 3 minutes. Season with salt and black pepper and turn off the heat. Add the basil leaves and mix gently. Top with lemon juice and serve immediately.
