Homemade croquettes with chicken, courgettes and spinach
Ingredients:
For the mass:
600 g of minced chicken breast
1 egg
1 courgette, grated (fine grater)
1 cup spinach (finely chopped)
2 finely chopped garlic cloves
1 1/2 cups (tea) of oat bran
1/2 stalk of chopped celery
1 tablespoon of chopped parsley
1 tablespoon of chopped chives
To make bread:
1 egg
1/2 cup rolled oats (fine flakes)
3 tablespoons of breadcrumbs
1/2 tablespoon of ground turmeric
Method of preparation:
In a bowl, mix all the ingredients of the dough well. With the help of a spoon, form balls and flatten them into croquettes. Keep in the fridge for a few minutes. In a plate, we break the egg and beat lightly with a fork. In another dish, mix the rest of the ingredients for the breading. Remove the morsels from the fridge, pass them one by one in the egg and then in the dry mixture. Place them in a non-stick pan and bake in a preheated oven (180 ° C) for 30 minutes or until golden brown. It can also be prepared in a pan or air fryer.
