A French classic, a puff pastry that combines crunchiness and creaminess has gained prominence in local bakeries
One of the most traditional desserts in France, the a thousand sheets has attracted more and more attention from sugar lovers around here. The candy basically consists of three layers of butter-based puff pastry, which folds up to six times – with each fold the dough turns 900 to 1000 times, giving the impression of a thousand “leaves” – filled with custard made with vanilla, milk, egg yolks, sugar, cornstarch and butter. A good millefeuille usually brings a crunchy, airy and golden dough, with a firm but not too heavy cream.
The origins of the delicacy date back to the 17th century: the recipe appears for the first time in 1651, in the book cook Francesco by chef François Pierre de la Varenne. Originally, the cream contained sour cherry brandy or rum instead of the vanilla it has become famous for. The recipe has undergone many adaptations over the years, including by celebrity chef Antonin Carême, one of the names behind the creation of French haute cuisine.

In the hands of local professionals, mil-folhas takes on different shapes and flavors, ranging from traditional vanilla to dulce de leche, paçoca and pistachio. Below is a selection of shops offering dessert.
Crime pastry shop
For ten years, chef Rafael Protti lived and studied in France, where he learned the recipe for millefeuille from the famous pastry chef Pierre Hermé. Totally artisanal and produced in the shop, the dessert is characterized by whipped cream with mascarpone and high quality butter. The difference lies in the caramelized puff pastry with powdered sugar, combined with an extra crunch, the result of a slightly longer time in the oven. Sold in the traditional vanilla flavor in three versions: single slice (R $ 22), always available in the shop and via Rappi; and larger for four to six people (R $ 22) and eight to ten people (R $ 180), upon request by telephone.

Thousand Pastry
In addition to the traditional vanilla, the pastry chef Calu – nickname of Carolina Molena – also offers the dessert in the sweet milk, pistachio and dark chocolate versions. The cream is made with Brazilian wild vanilla beans; the dulce de leche option brings a layer of cream and a layer of dulce de leche from Minas Gerais Rocca. The chocolate and pistachio options bring a mix of vanilla custard with flavored creams, the first with 70% chocolate and the other with pistachio chunks for extra crunch. All versions are available in mini sizes (three people, R $ 70); small (six to eight people, R $ 110); and large (12 to 16 people, R $ 195). Despite operating on orders only (ordering 24 hours in advance is recommended), customers can follow the assembly of the order in Mil’s open kitchen, which offers delivery throughout São Paulo. The brand also offers the “Mil to travel” kit, with puff pastry dishes, cream, sugar and a video with assembly instructions.

The flagship of a patisserie inspired by French cuisine, DAMA’s millefeuille follows the traditional recipe with local ingredients. The dessert is offered in traditional versions (with crème pâtissière) and dulce de leche, both sold for R $ 18.50 each. Customers can also order the 15cm cake version (for six people) for R $ 140 and the 22cm version (for ten people) for R $ 190. The kit available from DAMA Empório with three sheets of puff pastry, crème pâtissière and powdered sugar for R $ 190. The red fruit kit option is sold for R $ 208.50. For lunch, the shops also offer savory versions of salmon, goat cheese, and artichokes for R $ 46 each and accompany half a salad, as well as an éclair for dessert.

Choux SP
Before opening her own brand, pastry chef Natalie Sedlmayr spent a season studying and turning pro in the Paris area, where she learned some of the more traditional French pastry recipes, which she creatively adapts in Brazil. The millefeuille choux pastry uses high quality imported ingredients and easily balances the crunchiness when slicing. Available in vanilla (small for R $ 135, serves up to five slices and large for R $ 180, serves up to 10 slices) and dulce de leche (small for R $ 115 and large for R $ 180).
