Ingredients for the chicken and cheese calzone
- 2 fresh brewer’s yeast tablets (30 g each)
- 1 tablespoon of sugar
- 1/2 cup (tea) of oil
- 1 1/2 cups of warm water
- 2 teaspoons of salt
- 4 cups of flour (wheat)
- margarine to grease
Filling
- 2 cups cooked and shredded chicken breast
- 2 chopped seedless cherry tomatoes
- 1/4 cup chopped parsley
- 1/2 cup chopped green olives
- 2 cups of cream cheese
- Salt and black pepper to taste
Method of preparation
In a bowl put the yeast, sugar, oil, water and mix until dissolved. Add the salt, the flour and knead with your hands until you get a smooth, soft and non-sticky dough. If necessary, add more flour. Cover the dough and let it rest for 30 minutes.
To make the filling, mix the chicken, tomato, parsley, olives, ricotta, salt and pepper in another bowl. On a smooth surface roll out the dough with the help of a rolling pin and divide it into circles. Roll out the filling, close by folding the dough into a crescent and pinching the edges with a fork. Transfer the calzone to a lightly greased baking sheet and bake in a preheated medium oven for 20 minutes or until golden brown. Remove from the oven and serve.
