Creamy Bean Broth Ingredients:

  • 1 1/2 cups of beans
  • 1 bay leaf
  • 8 cups (tea) of water
  • 2 tablespoons of oil
  • 1 cup diced bacon
  • 400 g of diced cooked ham
  • 1 chopped onion
  • 1 minced clove of garlic
  • 300 g filament-free cassava, diced
  • Salt, pepper and chopped parsley to taste

Method of preparation:

In a pressure cooker put the beans, bay leaf and add half of the water. Cover and cook for 20 minutes after the pressure starts. Turn off, wait for all the pressure to come out naturally, open the pan and let the beans cool. Transfer to a blender and blend for 2 minutes. Reserve.

Heat the oil in another pressure cooker over medium heat and brown the bacon and meat for 5 minutes. Add the onion, garlic and sauté for 2 minutes. Pour in the remaining water, cassava, season with salt, pepper and cook 15 minutes after the pressure starts. Switch off, release all the pressure naturally and open the pot.

Put it back on the heat, add the beaten beans, season with salt and cook for 5 minutes in an open pan. Turn off, transfer to a bowl, sprinkle with parsley and serve.

Tip: To make this recipe vegan, simply remove the diced bacon and steak. Also, skip the meat preparation instructions and add the onion and garlic directly.
