Steak with Bean Tutu and Cabbage Ingredients:

  • 6 pork chops
  • 3 packs of seasoning for powdered meat
  • Salt and black pepper to taste
  • 6 tablespoons of oil
  • 1/2 cup (tea) of water

Bean Tutu:

  • 1 cup diced bacon
  • 2 slices of finely sliced ​​smoked pepperoni sausage
  • 1 chopped onion
  • 2 crushed cloves of garlic
  • 3 cups of beans (cooked with broth)
  • 1 cup (tea) of cassava flour
  • Salt, pepper and chopped parsley to taste

Kale:

  • 4 tablespoons of butter
  • 4 sliced ​​garlic cloves
  • 2 bunches of cabbage, thinly sliced
  • Salt to taste

Method of preparation:

Season the steaks with seasoning, salt and pepper. Reserve. For the tutu, in a pan, over medium heat, fry the bacon in its own fat until it starts to brown. Add the sausage, onion, garlic and sauté for 3 minutes. Add the beans with the broth and, as soon as it boils, sprinkle with the flour, stirring until it thickens. Season with salt, pepper, green smell, turn off and set aside.

For the cabbage, in a skillet over medium heat, melt the butter and sauté the garlic until golden brown. Add the cabbage and stir until wilted. Season with salt and set aside. In a skillet over high heat, heat the oil and fry the steaks for 4 minutes per side or until golden brown. Add the water and cook until all the water is gone. Serve with the tutu and cabbage.

Ingredients:

  • 1.2 kg of pork ribs, cut into pieces
  • juice of 2 lemons
  • 4 minced garlic cloves
  • 1/2 cup (tea) cachaça
  • Salt to taste
  • Fry oil

Bean Tutu:

  • 3 tablespoons of oil
  • 1 chopped onion
  • 2 minced garlic cloves
  • 1 cup bacon (chopped)
  • 1 slice of chopped Calabrian sausage
  • 4 cups of beans (cooked with broth)
  • Salt and black pepper to taste
  • 1 cup (tea) of cassava flour
  • 2 hard boiled eggs, chopped
  • 1/2 cup chopped parsley (green)

Method of preparation:

For the tutu, heat a skillet with oil over medium heat and sauté the onion, garlic, bacon and peppers until golden brown. Add the beans, season with salt and pepper and brown for 3 minutes. Add the cassava flour, eggs and parsley and mix until smooth. Reserve.

Then season the ribs with lemon juice, garlic, cachaça, salt and leave to rest for 2 hours. Heat a large skillet with oil and fry the ribs, a little at a time, until golden brown. After draining, serve with the bean tutu.

Loin with bean tutu

Sirloin With Bean Tutu Ingredients:

  • 1.2 kg pork loin (piece)
  • 2 tablespoons of grated onion
  • 2 crushed cloves of garlic
  • 1 lemon juice
  • 1 bay leaf
  • 1 tablespoon of chopped fresh ginger
  • Salt and black pepper to taste
  • 2 tablespoons of oil
  • 1/2 cup (tea) of hot water

Bean Tutu:

  • 100 g of diced bacon
  • 1 small onion, diced
  • 1 minced clove of garlic
  • 1 slice of chopped Calabrian sausage
  • 2 cups of cooked carioca beans with broth
  • Salt, pepper and chopped parsley to taste
  • 1/2 cup cassava flour (approx.)

Method of preparation:

Season the loin with the onion, garlic, juice, bay leaf, ginger, salt and pepper to taste. Leave to rest for 2 hours. Remove from the marinade and dry with paper towels. Heat the oil in a large, thick pan over high heat and brown the loin. Place in a pan with the marinade and hot water. Cover with aluminum foil and bake in a preheated oven for 1 hour.

In a skillet, over medium heat, sauté the bacon in its own fat, stirring until almost golden. Add the onion and garlic and sauté for 2 minutes. Pour in the peppers and fry until golden brown. Add the beans, salt and pepper and cook for 5 minutes. Stir in the flour a little at a time, stirring until the desired consistency is obtained. Let the loin rest for 10 minutes and slice it. Place them on a serving dish and drizzle with the sauce from the pan. Add the tutu and sprinkle with parsley. to serve.
