- Peel 8 sweet oranges without the white part
- 1 teaspoon of baking soda
- 2 cups (tea) of sugar
- 2 cups of water (tea)
- 2 cloves
- 1 piece of cinnamon stick
Method of preparation:
Soak the peel in water in the refrigerator for 24 hours, changing the water 3 times. Drain. Cook the peel in boiling water with baking soda for 20 minutes and drain. Let it cool and cut into strips. Dissolve the sugar in the water and pour it into a pan. Cook over low heat, without stirring, for 20 minutes. Add the peel and spices and cook for 20 minutes. Allow to cool and pour into a bowl. Serve with fresh cheese or ricotta and refrigerate.
Guava smear

Ingredients for the guava paste:
- 2 kg of ripe red guava
- 5 cups of sugar (approx.)
- margarine to grease
Method of preparation:
Wash the guavas well and dry them. Cut in half and remove the seeds with a spoon. Sieve the seeds and set aside. Cut 2 guavas into thin strips and set aside. Chop the rest and blend in a blender until you get a paste. Add the sieved seeds and mix.
Measure the obtained dough into small cups and add the same quantity of sugar cups. Place in a pan and cook over low heat, stirring occasionally, for 2 hours or until thick and red. Add the chopped guava and cook for another 50 minutes.
To check if it’s ready, dip a knife into the water and put it in the guava. The guava paste that sticks to the knife, put it back in the water and then remove it by hand. If it gets tough, it’s because it’s ready. Pour into 2 greased 27cm x 12cm pans and allow to cool. Remove from the mold and serve immediately or refrigerate until ready to serve.

Lemon Peel Ingredients:
- 12 whole lemons
- 1 cup (tea) of coarse salt
- 2 cups (tea) of sugar
- 2 cups of water (tea)
- 2 drops of green food coloring
Lemon mousse:
- 1 can of condensed milk
- 1/2 tin of sour cream (100 g)
- 1/2 cup (tea) of lemon juice
Chocolate-mousse:
- 200 g of melted milk chocolate
- 1/2 tin of sour cream (100 g)
Method of preparation:
Wash the lemons well, dry them and rub them over with coarse salt to extract the juice. Place in a pan, cover with water and cook for 5 minutes after it starts to boil. Drain, let cool and cut the lemons in half. Remove the pulp with the help of a spoon and discard it.
Wash the shells well, put them in a bowl, cover with water and leave to soak in the refrigerator for 12 hours, changing the water 3 times in that time. Drain, put in a pan, cover with water and cook for 5 minutes, after it starts to boil, being careful not to let the skin get too soft. Drain, allow to cool and if any pulp remains, drain it with a spoon.
Place in a bowl, cover with water and let it soak in the refrigerator for another 48 hours, changing the water 4 times in that time. Drain, rinse under running water and set aside. Place the sugar and water in a saucepan and heat over medium heat until dissolved. Add the lemon zest and food coloring and cook over low heat until the lemon is al dente and the syrup thickens slightly. Turn off, let cool and put in a compote or drain and fill with mousses.
In the blender, beat the ingredients of the lemon mousse and distribute them among the drained lemon peels, filling halfway. Refrigerate for 30 minutes. Save some for decorating. Still in the blender, beat the ingredients of the chocolate mousse and distribute them among the lemon peels, on top of the lemon mousse. On each place a drop of lemon mousse and draw a drawing with a toothpick. Refrigerate for 3 hours and 30 minutes before serving.
Strawberry jam with orange

- 700 g of chopped strawberries
- 1 1/2 cups (tea) of sugar
- 1/2 cup of orange juice
- 2 tablespoons of orange zest
Method of preparation:
In a pan, mix all the ingredients. Put on low heat and cook for 25 minutes, after boiling, or until reduced and slightly thickened. Let it cool, put it in a bowl and put it in the fridge for 1 hour. Serve with bread and toast.
Banana peel cake

Banana Peel Cake Ingredients:
- 1 cup of warm milk
- 4 banana peels, washed and chopped
- 1/2 cup butter (melted)
- 3 eggs
- 3 cups (tea) of sugar
- 3 cups of wheat flour (sifted)
- 1 tablespoon of baking powder
- 4 unripe bananas, cut into slices
- Wheat flour, sugar and cinnamon for sprinkling
- margarine to grease
- Breadcrumbs for flour
Method of preparation:
In a blender, beat the milk with the banana peels for 4 minutes. Reserve. In the planetary mixer, beat the butter, eggs and sugar until a homogeneous cream is obtained.
