Time: 1:15
Performance: 12 servings
Difficulty: easy
Ingredients for the moist cassava cake:
- 1 kg of raw cassava, grated in a fine grater
- 2 cups (tea) of milk
- 4 eggs
- 1 glass of coconut milk (200 ml)
- 100 g of grated coconut
- 50 g of grated Parmesan cheese
- 1/3 cup margarine (tea)
- 2 and 1/2 cups (tea) of sugar
- 4 tablespoons of wheat flour
- Margarine and wheat flour for greasing
Syrup
- 1 1/2 cups (tea) of water
- 1 cup (tea) of sugar
- 2 cloves
- 1 cinnamon stick
Method of preparation:
Beat the cassava, milk, eggs and coconut milk in a blender until blended. Pour into a bowl, add the rest of the ingredients and mix with a spoon. Pour into a hole in the center of 26 cm in diameter, greased and sprinkled. Bake in a preheated oven for 45 minutes or until golden brown.
Allow to cool and unmold. For the syrup, dissolve the sugar in the water in a pan. Add the spices and cook over low heat, without stirring, for 15 minutes or until a thin guarana-colored syrup forms. Let it cool down. Prick the cake with a toothpick and sprinkle with the syrup. Serve the cake at room temperature.
