Classic cheese fondue

Ingredients:
- 1 clove of garlic cut in half
- 1 1/2 glass of dry white wine
- 250 g coarsely grated Emmental cheese
- 250 g coarsely grated Gruyere cheese
- 3 heaping tablespoons of wheat flour
- 1 pinch of nutmeg
- 1 pinch of freshly ground white pepper
- 2 tablespoons of cognac
- 1 baguette of Italian bread, diced
Method of preparation:
Pass the minced garlic into the fondue pot, or medium pot, add the wine and bring to the heat until it boils. In a bowl, mix the cheeses with the flour and add the wine a little at a time, stirring constantly until they melt, forming a cream. Add the nutmeg, pepper and brandy, mixing well. Bring it to the table over the réchaud. To serve, everyone sticks a piece of bread onto their fork and dips it in the fondue.
Mock light cheese fondue

Ingredients:
- 1 cup of light cream cheese (200 g)
- 1/2 cup crumbled ricotta
- 1 cup (s) of skim milk
- 1 tablespoon of cornstarch
- Salt and grated nutmeg to taste
- 1 clove of garlic, unpeeled, minced
- Broccoli, cauliflower and carrots cooked al dente to accompany

Method of preparation:
In a blender, whisk the curd, ricotta, milk, cornstarch, salt and nutmeg until smooth. Pour into a pan and put over medium heat, stirring until thickened. In a fondue pot, puree the garlic clove, transfer the cream and keep warm. Serve with broccoli, cauliflower, carrots and cherry tomatoes.

Ingredients:
- 2 and 1/2 cans of drained green corn
- 2 tablespoons of water
- 1 teaspoon of cornstarch
- 4 tablespoons of sour cream
- Salt and pepper to taste
- 1 tablespoon of butter
Method of preparation:
In a pan, over low heat, put the corn, cover with water and cook until boiling. Turn off, pour the beat into the blender until smooth. In another pan, over medium heat, dissolve the cornstarch in the cream, stirring constantly, for 3 minutes. Add the cornmeal and cook over low heat until thickened. Transfer to a fondue saucepan and add salt, pepper and butter. Mix and serve with breaded chicken if desired.
Beef Fondue

Time: 30 minutes
Performance: 6 servings

Ingredients:
- 1 kg of fillet mignon, cut into cubes
- 6 tablespoons of butter
- 1/2 liter of dry red wine
- 1/2 cup of parsley
- 6 tablespoons of toasted wheat flour
- 1/2 cup chives (onion)
- 1 medium onion, chopped
- 2 crushed cloves of garlic
- Salt, pepper and paprika to taste
Method of preparation:
Season the meat with salt, paprika and pepper to taste. In a pan add the butter and brown it. Brown the meat to the desired point, remove and set aside. Add the onion and garlic to the remaining stock and sauté. When it boils, add the wine and wheat flour to thicken the broth. Season with salt and, if necessary, add more. Put the meat and the sauce in a fondue saucepan, adding the parsley and chives. Serve hot.
Chocolate Fondue With Whiskey And Honey

Time: 30 minutes

Ingredients:
- 100 g of milk chocolate
- 100 g of semi-sweet chocolate
- 1 can of sour cream
- 2 tablespoons of whiskey
- 1 tablespoon of honey
- 1 box of strawberries
- 2 dwarf bananas
Method of preparation:
Grate the chocolates and place them in a fondue saucepan. Add the cream, whiskey and honey. Mix until well dissolved. Chop the strawberries and bananas and arrange them on a serving dish. Serve with the fondue.
