Ingredients:

  • 1.5 liters of vegetable broth
  • ½ cup chopped onion
  • 3 tablespoons of butter (for sautéing onions)
  • 1 cup of arborio or caneroli rice
  • 1 tablespoon of ground turmeric
  • 1 tablespoon of butter
  • 1 cup (tea) of grated cheese
  • 1 cup of seedless grapes

Method of preparation:

  • Melt the butter and lightly fry the onions over low heat;
  • Add the rice and mix gently for 1 minute;
  • Add 1 ladle of vegetable broth, the ground saffron and stir without stopping until the broth is almost dry, always over low heat;
  • Add 1 more cup of vegetable broth at a time, stirring gently, until the rice is completely cooked.
  • Turn off the heat and add 1 tablespoon of butter and the semi-cured cheese. Gently mix for 2 minutes and add the victory grapes, stirring again;
  • Season with salt and serve.
