Paella

ingredients

  • 1 cup of olive oil
  • 2 red peppers, diced
  • 3 minced garlic cloves
  • 400 g of octopus
  • 400 g of squid
  • 4 tomatoes cut into pieces
  • 20 g of saffron
  • 2 cups of tea Rice cooked
  • 1 cup of pea tea
  • 4 cups of water
  • Salt and ground pepper to taste
  • 600 g of pink shrimp
  • 500 g of shelled shellfish, cooked

Method of preparation

In a large skillet or paejeria, heat the oil and sauté the garlic and pepper. Then add the squid and octopus and sauté for 2 minutes. Add the tomatoes and saffron and mix. Then add the cooked rice and peas and mix for about 3 minutes. Add the water and season with salt and ground black pepper. After 10 minutes of cooking, add the prawns and cook for another 10 minutes. Finally, garnish with seafood.

Tip: garnish the dish with lemon and serve with lobster.

Gazpacho

ingredients

  • 1/2 small cucumber
  • 1/2 green pepper, chopped and seeded
  • 500 g of peeled ripe tomato
  • 1/2 chopped onion
  • 3 minced garlic cloves
  • 3 tablespoons of olive oil
  • 2 tablespoons of white wine vinegar
  • 2 tablespoons of lemon juice
  • 2 tablespoons of concentrate tomato
  • 450 ml of tomato juice
  • Salt and ground pepper to taste

Method of preparation

In a large bowl coarsely grate the cucumber and add the chopped green pepper. In a blender, quickly blend the tomatoes, onion and garlic. Then add the oil, vinegar, lemon juice and tomato paste and beat until smooth. Add the tomato mixture to the bowl with the cucumber and pepper and mix well. Add the tomato juice and mix. Season with salt and ground pepper. Then cover the bowl and refrigerate for about 6 hours. Serve the soup in bowls.

ingredients

  • 250 ml of water
  • 60 g of butter
  • 1 teaspoon of salt
  • 225 g of wheat flour
  • 2 eggs
  • sugar and cinnamon for sprinkling
  • Fry oil

Method of preparation

Put the water, butter and salt in a pan. When the butter has melted and the mixture begins to boil, add all the flour at once. Knead quickly until the dough comes off the bottom of the pan and is smooth. Then, remove the pan from the heat and add the eggs, one at a time, stirring quickly each time you add the egg.

Wait for it to cool and put the dough in the machine. churros or in a plastic bag with a pastry tip. Press so that each churro comes out and cut with scissors to the desired size. Fry the churros in a pan with hot oil. Drain them when they are golden and, finally, pass them all in a mixture of sugar and cinnamon. Serve with your favorite filling.
