Ingredients:

  • 800 g of asterix potatoes
  • 1 yolk
  • 1 and 1/2 cups wheat flour (approximately)
  • 2 cups mozzarella (diced)
  • Grated Parmesan for dusting
  • Basil leaves to decorate

Sauce

  • 3 tablespoons of olive oil
  • 1 chopped onion
  • 2 minced garlic cloves
  • 6 chopped tomatoes
  • 1 cup tomato sauce (tea)
  • 1/2 cup basil (chopped)
  • Salt and black pepper to taste

Method of preparation:

For the sauce, in a skillet over medium heat, heat the olive oil and fry the peppers until golden brown. Add the onion, garlic and saute for 3 minutes. Add the tomato and sauce and cook for 15 minutes over low heat until a thick sauce is obtained. Add the basil, season with salt, pepper and cook for another 5 minutes. Turn off and reserve.

Steam the potatoes until tender. Squeeze and leave to cool. In a bowl, put the mashed potatoes, egg yolk and flour. Knead with your hands until a homogeneous mass is formed. If necessary, add more flour, a little at a time, to shape.

Open small portions of dough in the palm of your hand, place a cube of mozzarella in the center and form balls. Cook in boiling water for 2 minutes or until balls rise to the surface.

Remove with a slotted spoon and place in a large bowl. Cover with the sauce, sprinkle with Parmesan and place in a medium preheated oven (180°C) for 10 minutes. Remove from the oven, decorate with basil and serve.
