caprese bruschetta

Ingredients:
- 1 clove of garlic
- 12 slices of Italian bread 1 inch thick
- olive oil for greasing
- 3 ripe seedless tomatoes cut into cubes
- 2 tablespoons of chopped basil
- Salt and minced pepper
- 1 and 1/2 cups shredded buffalo mozzarella
black olive paste
- 1 1/2 cups pitted black olives
- 4 tablespoons of olive oil
Method of preparation:
- For the olive paste, beat the ingredients in a food processor or blender using the pulsar button. Reserve.
- Cut off the end of the garlic clove and spread it all over the bread slices.
- Arrange them in a baking dish greased with extra virgin olive oil.
- Divide the olive paste among the slices.
- In a bowl mix the tomato and basil and season with salt, pepper and olive oil.
- Divide the mixture between the slices of bread.
- Sprinkle over the buffalo mozzarella, drizzle with olive oil and place in a preheated medium oven for 15 minutes or until golden brown.
- Serve immediately.

Ingredients:
- 1 tablet of fresh brewer’s yeast (15g)
- 2 tablespoons of sugar
- 1 and 1/2 cups warm milk
- 1 egg
- 2 tablespoons of softened butter
- 1 teaspoon of salt
- 4 cups wheat flour (approximately)
- Soft wheat flour for flouring
- Margarine and wheat flour for greasing and flouring
- 1 egg yolk for brushing
Filling
- 1/2 cup bacon (diced)
- 1 tablespoon of olive oil
- 1/2 chopped onion
- 1/2 bunch of chopped escarole
- Salt and black pepper to taste
- 1/2 cup chopped sun-dried tomatoes
Cheese sauce
- 1/2 cup cream (milk)
- 2 tablespoons of cream cheese
- 1/2 cup cheese (chopped)
- Salt and chopped parsley to taste
Method of preparation:
- In a blender, beat the yeast, sugar, warm milk, egg, butter and salt until dissolved.
- Transfer to a bowl and mix in the flour, a little at a time, kneading until the dough disapproves of your hands.
- If necessary, add more flour.
- Leave to rest for 1 hour.
- Divide the dough into 2 parts.
- Open each dough on a floured surface, forming 2 discs of 30 cm each.
- Arrange one of the circles in a greased and floured 30 cm diameter pizza pan.
- In the center of the circle, cut another circle with a diameter of 6 cm.
- Repeat the process with the other dough.
- Spread the already cold filling all over the side of one of the doughs, keeping 1 cm from the lateral edge and 1 cm from the central edge.
- Cover with the other disk of dough and press the edges well to seal.
- With a sharp knife make a perpendicular cut every 4 cm around the disc.
- Turn the cut slices over, being careful not to detach them from the pastry, so that the opening with the filling is facing upwards.
- Brush with the beaten egg yolk and bake in a preheated medium oven for 35 minutes or until golden brown.
- For the sauce, beat the ingredients in a food processor and place in a bowl.
- Remove the pasta from the oven, put the sauce in the center and serve immediately.
sausage

Time: 40 minutes
Performance: 20 units
Difficulty: easy
ingredients
- 1 celery stalk cut into cubes
- 1 grated carrot
- Salt, black pepper and chopped parsley to taste
- 1 large potato, diced
- 2 mandioquinhas cooked in cubes
- 1/2 cup corn (drained)
- 2 cups chicken (cooked and shredded)
- 1/2 cup mayonnaise (tea)
- 1/2 cup cream (milk)
- 20 pasta ready for boats
- Straw potato to decorate
Method of preparation
- In a bowl mix the celery, carrot, potato, cassava, corn and chicken.
- In another bowl, mix the mayonnaise and cream and season with salt, pepper and green perfume.
- Pour over the previous mixture and mix lightly.
- Distribute among the boats, sprinkle with straw potatoes and serve.
dadinho tapioca

Time: 1h (+6h of fridge)
Performance: 5 portions
Difficulty: easy
Ingredients:
- 300 g of granulated tapioca
- 300 g of grated ricotta
- 1 teaspoon of salt
- 2 and 1/2 cups warm milk
- Fry oil
Method of preparation:
- In a bowl mix the tapioca, cheese and salt.
- Add the milk and stir until the tapioca absorbs the milk and is incorporated.
- Spread into a small, aluminum foil-lined rectangular baking dish, leveling with a spoon, and cover with aluminum foil.
- Refrigerate for 6 hours or until solidified.
- Cut into squares and fry in hot oil, a little at a time, until golden brown.
- Drain on absorbent paper and serve.
fish pie

Time: 1 hour
Performance: 6 portions
Difficulty: easy
Ingredients:
- 600 g of potatoes in their skins
- 500 g of cooked and minced white fish
- 2 eggs
- 1 tablespoon of wheat flour
- 4 tablespoons of corn starch
- 1/2 chopped onion
- 1 minced garlic clove
- Salt and black pepper to taste
- Fry oil
Method of preparation:
- Cook the potato in a pan with water until it softens.
- Drain and pass through the juicer while still hot.
- Pour into a bowl, add the fish, eggs, flour, cornstarch, onion, garlic, season with salt and pepper and mix.
- Shape the gnocchi with your hands and fry them, a little at a time, in very hot oil, until golden brown.
- Drain on paper towels.
