Artisan panettone beats industrial panettone at Christmas in Italy

A survey by the Nielsen Institute shows that during the Christmas period the preference of Italian families for artisanal panettone surpassed the industrial one.

The data collected at the request of the Csm Bakery company show that the artisan Panettone continues to be mandatory in celebrations in the European country. Among the taste preferences there are the classic ones or those without raisins and candied fruit, those with eggnog cream, icing or chocolate, as well as vegan or light.

For residents of Sardinia in southern Italy, one of the favorite types is the one made with spiny artichoke, orange, Vernaccia – grape variety -, yogurt, myrtle, mandarin and quince.

The handcrafted version even represents 52% of the total value of the sector. In Italy, according to the research office of Confartigianato Imprese Sardegna, over 50 million pieces (more than 26 thousand tons) have been sold, for a total of 195 million euros, despite the post-Covid and the energy and economic crisis. The number represents a 19.5% increase over the same period last year.

“For some time now, more and more consumers have been going crazy for artisan panettone not only in Sardinia or the rest of Italy, but also in the rest of the world, such as the United States, where it has become a real ‘obsession’ ‘, with bakers and Italian pastry chefs who struggle to get close to ‘perfect tastes'”, explained Marco Rau, representative of Confartigianato Sardegna for food. , the price of flour increased by 33.8% between October and November 2021 and October and November this year, that of oil increased by 29%, olive oil, 43.6%, seeds miscellaneous, 16.6%, butter, 23.5%, and sugar, 19.4%.

“Despite all this, the increase in the average cost of these artisan sweets was only 7%. Customers know very well that for at least 5 or 6 years our prices have remained practically unchanged and that in this we have evaluated ourselves and made sacrifices long term. However, we cannot continue with this situation of continuous penalization of the sector”, concluded Rau.
