Ingredients (6 to 8 servings)
1 teacup of sugar
1 diced pineapple (1 kg)
1/2 cup of white raisins
1/2 glass of dry white wine (100 ml)
2 cinnamon sticks of 5 cm
Method of preparation
1. Place the sugar in a pressure cooker over low heat, stirring occasionally, until it dissolves and forms a medium caramel.
2. Add remaining ingredients and increase heat to medium.
3. When the caramel melts and comes to a boil, reduce the heat again, cover and cook for 15 minutes, timed after the whistle starts.
4. Wait for the pressure to release naturally before opening the pan.
5. Transfer the candy to a bowl and refrigerate until ready to serve.
Sweet potato
You only need 10 minutes, even in a pressure cooker, to enrich your desserts!

Ingredients (8 servings)
800 g peeled sweet potatoes, cut into 3 cm thick slices
1 cup of granulated sugar
2/3 cup maple syrup or brown sugar
1/2 cup water (100ml)
1 cinnamon stick
Method of preparation
1. Place the sweet potato in the pressure cooker and add the other ingredients.
2. Cover and cook for 10 minutes from the start of boiling (whistling).
3. Wait for the pressure to release naturally and transfer the candy to a bowl.
4. Leave to cool or, if you prefer, serve hot with cream ice cream.
pear with wine
Even in a pressure cooker, only 3 ingredients are needed and it is very practical and fast (it only takes 12 hours of cooking). Have fun!

Ingredients (4 to 6 servings)
1 kg of firm pears, Portuguese type, peeled and seeded, halved
1 1/2 cups sugar
1 glass of dry red wine
Method of preparation
1. Mix the ingredients in the pressure cooker and cover.
2. Place over medium heat and cook for 3 minutes, starting at boiling (hissing) point.
3. Open the jar only the next day (12 hours).
Apple, apricot and raisin
You don’t even need sugar, because fruits are sweet. Your family will love it!

Ingredients (8 servings)
2 teacups of water
1 kg apples, peeled and diced (keep the peel aside)
1 bag of black tea or 1/2 cup of white wine
200 g of coarsely chopped apricots
150 g of raisins
1 pinch of nutmeg
Method of preparation
1. Bring half the water and half the apple peels to a boil.
2. Boil for 2 minutes, strain and set the liquid aside.
3. In another pot, boil the remaining water, turn off the heat and steep the tea bag.
4. Put the apple, raisins and apricot in a refractory.
5. Sprinkle with nutmeg and season with black tea (or white wine) and apple tea.
6. Cover with aluminum foil and place in a medium preheated oven (180ºC) for about two hours, stirring every half hour with a wooden spoon.
7. Leave to cool and transfer to a glass with a lid.
8. Store in the fridge and serve plain, with ice cream or yoghurt.
watermelon peel
To avoid waste and take advantage of all the nutrients of the fruit. Try it!

Ingredients (4 portions)
Peel of 1/4 watermelon
1/2 liter of water
3 teacups of sugar
cloves and cinnamon sticks to taste
Method of preparation
1. Remove all the red (fruit) and green parts of the watermelon, leaving only the white part.
2. Cut into cubes or thin slices or grate on the coarse part of the grater.
3. Put the sugar, cloves and cinnamon in a pan with the water, to taste.
4. Simmer over medium heat for about 25 minutes or until the skin is softened and the syrup thickens (add more water if needed).
5. Let cool and serve with white or plain cheese or refrigerate.
Spice syrup fruit
Plum, grape, carambola, kiwi… but you can experiment with other fruits. See how easy it is!

¾ cup sugar
½ cup of water (100ml)
4 anise stars
½ teaspoon cloves
10 grains of white pepper
2 pieces of cinnamon stick
1 and a half glasses of semi-dry white wine
1 large fresh plum, peeled and diced
250 g of Italian grapes in half
1 sliced ​​carambola
2 sliced ​​kiwis
Method of preparation
1. Bring first 7 ingredients to medium heat, stirring occasionally, for 8 minutes or until syrup thickens slightly.
2. Pour over the fruit in a compote or bowl.
