Ingredients:

  • 2 kg chicken pieces
  • Salt, black pepper and chopped parsley to taste
  • 2 tablespoons of oil
  • 1 chopped onion
  • 2 minced garlic cloves
  • 1 liter of water
  • 12 canned pequi drained

Method of preparation:

  1. Season the chicken with salt and pepper.
  2. Heat a pan over medium heat with the oil and brown the chicken pieces a little at a time.
  3. Add the onion, garlic, turmeric and saute for 5 minutes.
  4. Pour the chicken broth dissolved in the water, cover and cook for 30 minutes.
  5. Add the pequi and cook until the water almost dries up.
  6. Transfer to a platter and serve sprinkled with parsley.

Rice with chicken and goiano pequi

Ingredients:

  • 4 tablespoons of oil
  • 1 kg of chicken legs and thighs
  • 4 minced garlic cloves
  • Salt and black pepper to taste
  • 1 cube of chicken stock
  • 9 cups of hot water
  • 1 chopped onion
  • 3 cups rice (washed and drained)
  • 1 teaspoon of turmeric
  • 300 g of canned whole pequis
  • 2 chopped tomatoes
  • chopped parsley for sprinkling

Method of preparation:

  1. Heat a large frying pan with the oil over high heat and brown the chicken pieces seasoned with the garlic, salt and pepper.
  2. Add the chicken broth and cover with 2 cups (tea) of hot water.
  3. Cook with the pan covered for 10 minutes or until the chicken is softened and the water dries up.
  4. Add the onion, rice, turmeric, pepper and saute for 2 minutes.
  5. Pour the remaining hot water, the pequi, the tomato, season with salt and cook over low heat with the pan half-covered until the water has almost dried up and the rice is cooked.
  6. Turn off and leave to rest with the pan covered for 10 minutes.
  7. Transfer to a plate, sprinkle with parsley and serve.

Jasmine rice with pequi

Time: 50 minutes

Performance: 5 portions

Difficulty: easy

Ingredients:

  • 5 tablespoons of oil
  • 1 1/2 cups chopped canned pequi (tea).
  • 1 tablespoon of minced garlic
  • 1 chopped onion
  • 1 cup cold water (tea)
  • 2 cups of Thai jasmine rice
  • 4 cups boiling water (tea)
  • Salt and crushed pepper to taste
  • Parsley and chopped green onions for sprinkling

Method of preparation:

  1. In a pan, over medium heat, add the oil and sauté the pequi with the garlic and onion.
  2. Sauté for 10 minutes and add cold water.
  3. Cook until the pequi is soft and the water evaporates. Add the rice and fry it a little.
  4. Add boiling water and salt.
  5. Cover and cook over low heat for 20 minutes. When the rice is ready, mix it with the pepper.
  6. Sprinkle with parsley and chives just before serving.

Ingredients:

  • 3 tablespoons of oil
  • 2 minced garlic cloves
  • 1 chopped onion
  • 1 cup canned pequi (striped)
  • 2 cups uncooked parboiled rice
  • 1 cube of chicken stock
  • 4 cups boiling water (tea)
  • salt to taste

Method of preparation:

  1. In a skillet, over medium heat, heat the oil and saute the garlic and onion for 3 minutes.
  2. Add the pequi and rice and sauté for 2 minutes.
  3. Add the chicken broth dissolved in the water, season with salt, lower the heat and cook in a covered saucepan until the water has dried and the rice is soft.
  4. Serve immediately.
