Onion and Rosemary focaccia

Ingredients:
- 15 g of fresh yeast
- 1 cup of water (warm)
- 1/2 teaspoon salt
- 2 tablespoons of oil
- 1 teaspoon of sugar
- Oil for greasing

- 1 1/2 cups finely sliced onion
- 3 tablespoons of oil
- 2 tablespoons chopped fresh rosemary for sprinkling
Method of preparation:
- Dissolve yeast in 1/2 cup water, stir in 1 1/2 cups flour and salt.
- Cover and let rest for 20 minutes.
- Add the remaining flour, a little at a time, kneading until you get a soft, sticky dough.
- Cover and let sit for 40 minutes or until doubled in size.
- With lightly oiled hands, transfer the dough to a 25cm x 35cm cake tin, also greased, and smooth to even.
- Cover and leave to rest for another 30 minutes.
- In a non-stick pan, heat the onion with the oil and sauté over low heat for 15 minutes or until it is soft and lightly browned.
- Spread the dough over it and then sprinkle with rosemary.
- Place in a medium oven, preheated, for 40 minutes or until golden brown.
- Serve hot or at room temperature.
