Ingredients for sweet potato omelette

  • 4 eggs
  • 1 cup cooked sweet potatoes (diced)
  • 1/2 cup cabbage (thinly sliced)
  • 1 chopped seedless tomato
  • Salt and black pepper to taste
  • 1 tablespoon of olive oil

Method of preparation

In a bowl, beat the eggs with a fork until smooth. Add the potato, cabbage and tomato. Season with salt and pepper.

In a medium nonstick skillet, heat the oil over medium heat and pour in the eggs. Cook for 5 minutes on each side over low heat or until no longer undercooked. Serve immediately.
