Vegetable and cheese soufflé recipe
Preparation time: 50 minutes
Performance: 8 portions

Ingredients:
- 2 diced potatoes
- 1 cup green beans (chopped)
- salt to taste
- 2 cups mozzarella (diced)
- 4 tablespoons of oil
- 4 tablespoons of wheat flour
- 1 cup of milk (tea)
- 1 teaspoon baking powder (coffee)
- 5 eggs (whites and yolks separated)
- oil for greasing
- 1 cup grated Parmesan for sprinkling
Method of preparation:
- First, cook the potato, carrot and green beans in salted water until soft.
- Then drain, put in a bowl and leave to cool.
- Shortly after, add the mozzarella, mix and reserve.
- In another bowl mix the oil, flour, milk, yeast and egg yolks.
- Then, add to the reserved vegetables, season with salt, and mix.
- In another bowl, whip the egg whites until stiff, pour them into the previous mixture and mix gently.
- Divide the dough into individual greased refractories, sprinkle them with Parmesan and arrange them next to each other in a large pan.
- Place in a medium, preheated oven for 20 minutes or until golden brown.
- Finally, serve after.
