Vegetable and cheese soufflé recipe

Preparation time: 50 minutes

Ingredients:

  • 2 diced potatoes
  • 1 cup green beans (chopped)
  • salt to taste
  • 2 cups mozzarella (diced)
  • 4 tablespoons of oil
  • 4 tablespoons of wheat flour
  • 1 cup of milk (tea)
  • 1 teaspoon baking powder (coffee)
  • 5 eggs (whites and yolks separated)
  • oil for greasing
  • 1 cup grated Parmesan for sprinkling

Method of preparation:

  1. First, cook the potato, carrot and green beans in salted water until soft.
  2. Then drain, put in a bowl and leave to cool.
  3. Shortly after, add the mozzarella, mix and reserve.
  4. In another bowl mix the oil, flour, milk, yeast and egg yolks.
  5. Then, add to the reserved vegetables, season with salt, and mix.
  6. In another bowl, whip the egg whites until stiff, pour them into the previous mixture and mix gently.
  7. Divide the dough into individual greased refractories, sprinkle them with Parmesan and arrange them next to each other in a large pan.
  8. Place in a medium, preheated oven for 20 minutes or until golden brown.
  9. Finally, serve after.
