Simple tapioca omelette with cheese

Weather: 30min (+5min rest)
Performance: 2 portions
Difficulty: easy
Ingredients:
- 2 tablespoons of tapioca flour
- Salt and black pepper to taste
- 3/4 cup (tea) of milk
- 1 tablespoon of margarine
- 4 eggs (whites and yolks separated)
- margarine for greasing
- 1/2 cup (tea) cream cheese
- 1 cup mozzarella (diced)
Method of preparation:
- Mix tapioca, salt, pepper and milk in a pan
- Let it rest for 5 minutes
- Cook over medium heat until boiling, stirring constantly.
- Add the margarine and then let it melt
- Remove from heat and leave to cool
- Beat in the egg whites and reserve
- Beat the egg yolks until frothy and gradually add the tapioca mixture
- Add the egg whites and mix gently
- Grease a medium round refractory with margarine and pour the mixture
- Bake in a medium oven, preheated, for 15 minutes.
- Detach the edges with a spatula, turn the plate upside down, pour the curd, arrange and mozzarella and serve after.
Simple sweet potato omelette

Ingredients:
- 4 eggs
- 1 cup cooked sweet potatoes (diced)
- 1/2 cup cabbage (thinly sliced)
- 1 chopped seedless tomato
- Salt and black pepper to taste
- 1 tablespoon of olive oil
Method of preparation:
- In a bowl, beat the eggs with a fork until smooth.
- Add the potatoes, cabbage and tomatoes
- Season with salt and pepper
- In a medium nonstick skillet, heat the oil over medium heat and pour in the eggs.
- Cook for 5 minutes on each side over low heat or until no longer undercooked.
- Serve immediately.
Simple gorgonzola omelette

Ingredients:
- 4 eggs
- 2 tablespoons of sour cream
- Salt and black pepper to taste
- 1 tablespoon of butter
- 3/4 cup of crumbled blue cheese
Method of preparation:
- In a bowl, beat the eggs with the cream, salt and pepper to taste
- Melt the butter in a non-stick pan over medium heat and pour in the eggs. Fry until golden brown, spread on the blue cheese and fry for another 1 minute. Fold in half and place on a plate. If desired, serve with cream cheese.
Simple hot mixed omelette

Ingredients:
- 6 eggs
- 1 teaspoon cornstarch
- Salt and black pepper to taste
- Butter for greasing
Filling
- 250 g of sliced lean ham
- 250 g of grated cheese
Method of preparation:
- In a bowl, with a wire whisk, beat the eggs with the cornstarch, salt and pepper.
- Heat a large, greased, nonstick skillet over medium heat and pour in 1/3 of the egg mixture.
- Leave to firm up and turn brown on the other side.
- Spread the ham slices, cheese slices, sprinkle with oregano, fold in half and cover to melt the cheese
- Repeat the process making 2 more omelettes
- Serve immediately.

Ingredients:
- 1 teaspoon of olive oil
- 5 eggs
- 3 tablespoons of oil
- 2 heaping tablespoons wheat flour
- 1 tablespoon of grated parmesan
- 1 teaspoon(s) minced garlic
- Salt, black pepper and chopped parsley to taste
- 1 cup diced ham
- 1 chopped seedless tomato
- 1/2 cup sliced green olives
Method of preparation:
- In a non-stick pan, combine the oil and set aside.
- In a blender, beat the eggs, oil, flour, Parmesan and garlic until smooth.
- Pour into a bowl, add the ham, tomato, olives, salt, pepper, green odor and mix
- Bring the pan to medium heat and pour in half of the mixture, browning on both sides.
- Repeat the procedure with the rest of the dough and serve later.
