Bean Biscuit Stew

ingredients

  • 2 cups of bean broth
  • 2 eggs
  • 6 tablespoons of breadcrumbs
  • Salt and ground black pepper to taste

Filling

  • 1 cup of chopped bacon
  • 1 peeled and chopped onion
  • 3 chopped cabbage leaves

Method of preparation

Pasta

Put the sausage in a pan and brown it over medium heat until golden brown. Add the grains and bean broth, salt and black pepper and cook for 2 minutes. Turn off the heat and wait for it to cool down. Then, transfer the mixture to a blender and blend until smooth.

Transfer the mixture back to the pan, add the egg and breadcrumbs and cook over medium heat until it pulls away from the bottom of the pan. Turn off the heat, place the dough on a container and put it in the fridge for 30 minutes.

Filling

In a skillet place the bacon and onion and bring to medium heat to saute until golden brown. Add the cabbage and saute until wilted. Turn off the heat and set aside.

  • 300g of mozzarella cheese sliced
  • 2 tomatoes cut into rings
  • 1 onion, peeled and cut into rings
  • 1 egg yolk for brushing
  • Soft wheat flour for flouring
  • Oil for greasing

Method of preparation

In a blender, put the milk, water, salt, sugar, yeast, oil and eggs and beat for 3 minutes. Transfer to a container and gradually add the wheat flour and knead until smooth. Knead the dough well and let it rest for 15 minutes.

Next, sprinkle a smooth surface with wheat flour and open the dough with the help of a rolling pin. Place the cheese, ham, tomatoes and onions on one side of the dough and fold in half. Method of preparation

In a pan, put the sifted tapioca flour and cook until it detaches from the bottom of the pan. Turn off the heat and set aside. In a frying pan, put the olive oil and heat over medium heat. Add the onion and garlic and saute. Add the dried meat, salt and oregano and mix well. Arrange the filling on the tapioca and serve immediately.
