Origins and culinary differences

The origin of meatballs has no clear national boundaries. According to a hypothesis by food historian William Pokhlebkin, the dish is a modified version of the Turkic dish kyufta that entered the regional cuisine through Moldavian culture. Another historical account points to Caucasian roots.

In Russian grammar, the word has no singular form, leading to the established use of the diminutive term teftelka for a single meatball.

The guide clarifies distinctions between meatballs and related dishes like frikadelki and ezhiki. Frikadelki consist of pure meat without added grains, weigh 10 to 20 grams, and are typically boiled in soup broth. Ezhiki, or hedgehogs, are a variant of tefteli made exclusively with rice that protrudes like needles and are served in thick sour cream or tomato gravy.

Basic meatball preparation rules

A basic master instruction recommends using a mixed minced meat of 60 percent beef and 40 percent pork for optimal fat content, density, and juiciness. Shaping, frying, and simmering technique

With wet hands, shape the mixture into balls 5 to 6 centimeters in diameter weighing 60 to 80 grams, yielding 6 to 8 meatballs per 500 grams of minced meat. Rolling each ball in flour creates a golden crust, locks in juices, and thickens the gravy during cooking.

If using wild mushrooms, boil 300 grams for 20 to 30 minutes, though champignons skip this step. Fry one chopped onion until translucent, add the mushrooms, and fry for 7 to 10 minutes until liquid evaporates. Stir in one tablespoon of flour for 1 minute, add 200 milliliters of 20 percent cream, hot water, salt, pepper, and thyme, boiling 3 to 5 minutes until thick. Simmer meatballs in the sauce for 15 to 20 minutes, rest 5 to 7 minutes, and serve hot.

Alternative grain, cheese, and potato recipes

Storage instructions state that cooked meatballs in sauce keep in the refrigerator at 4 to 6 degrees Celsius for up to 48 hours, while meatballs without sauce keep for up to 72 hours. For freezing, freeze only raw meatballs in a single layer on a board before transferring to a bag, storing for up to 3 months. Raw meatballs can be cooked directly from frozen by extending frying time by 5 to 7 minutes.
