Vegan pancake filled with vegetables for busy days


For those busy days, when we don’t have many options to make, this pancake saves. In addition to being cheap, it is healthy and vegan.




That moment when we get to the kitchen, the fruit bowl is empty and there isn’t even stale bread in the cupboard, then we open the fridge, there are some vegetables that go bad if not eaten, this pancake comes as a joker to save breakfast .

Some people may find it impossible to consume plant foods alone and often the difficulty of accessing simple preparations is another barrier for these people.

Just what Leo and I do is transfer our daily rush to texts, recipes and articles. This pancake was born when at home I only had half a carrot, half a courgette, a tomato and an onion for breakfast.

I put it all together, made a simple pancake batter, seasoned it and grilled it in a skillet, the result was so amazing even I couldn’t believe it.

INGREDIENTS:

1 cup of wheat flour

½ glass of water

3 tablespoons of vegetable oil

salt to taste

1 level teaspoon of chemical yeast

paprika to taste

black pepper to taste

oregano to taste

1. Chop the onion, tomato and all the vegetables

2. Put the water, flour, oil, salt and all the chopped vegetables in a bowl, add the spices and mix well

3. Add the yeast and mix a little at a time

4. Put some oil in a pan and pour the pancake batter, as soon as it is golden on both sides it is ready
