Irresistible recipe of seasoned mayonnaise

Preparation time: 1h (+2h of fridge)

Ingredients:

  • 1 bay leaf
  • 1 kg of peeled potatoes, diced
  • 1 diced green apple
  • 1 lemon juice
  • 1 can of drained peas
  • 1 medium carrot
  • 1 tomato
  • Raisins to taste

mayonnaise

  • 1/3 cup milk (very cold)
  • 1 clove of garlic
  • 1/3 cup basil leaves or parsley
  • Salt and black pepper to taste
  • 2/3 cup oil (approximately)

Method of preparation:

  1. Bring a pot with water, salt and bay leaf to the boil.
  2. When it comes to a boil, add the potato and carrot and cook for 12 minutes or until softened, don’t overcook as they will break down. Drain and rinse under cold water.
  3. Pour into a salad bowl.
  4. Sprinkle the apple cubes with half the lemon juice to keep them from browning.
  5. Mix the potato and carrot with the apple, tomato and pea.
  6. In a blender, beat the milk, the rest of the lemon, the garlic, the basil, the salt and the pepper until blended and, without ceasing to beat, pour the oil slowly until you obtain a thick cream.
  7. Mix with salad and refrigerate for 2 hours before serving.
