Banana cake that looks like a cake and pops out of the mold, easy and really delicious
A delicious cake, made with the blender and breadcrumbs, that comes out of the oven and looks more like a cake, with banana in the dough and topping.

Caramelized Banana Ingredients
– 3 1/2 units bananas, sliced lengthwise (or enough to cover the bottom of the pan).
– 1 cup(s) of sugar
– 1 tablespoon unsalted butter
Ingredients SMOOTHED BANANA CAKE
– 1/2 unit of banana, sliced or chopped
– 2 large eggs, whole
– 1/4 cup(s) oil
– 1/3 cup(s) natural yogurt (can also be curdled) (or milk)
– 1 cup(s) breadcrumbs, fine and sifted w
– 3/4 cup(s) of sugar
– 1/2 teaspoon(s) of vanilla essence
– 1 teaspoon(s) of chemical yeast
PREPARATION:
- Start by caramelizing the bananas (see preparation). For this, choose a mold that can be placed on the stove and in the oven (aluminum or iron, for example). For 2 portions, use a 20×20 cm round or square baking pan. Warning: the choice of shape is important, as the idea of this cake is to resemble a cake once ready.
- Separate other utensils and ingredients from the recipe.
- Sift the breadcrumbs into a bowl.
- Preheat the oven to 180°C.
PREPARATION:
Caramelized banana:
- Peel and cut the bananas into slices lengthwise, if the banana is very large cut the slices in half so that they do not overlap once placed in the pan.
- Place the sugar and butter in the pan in which the cake will be baked.
- Place over a low heat to melt it and acquire a light caramelised colour: rotate the mold so that the caramel also reaches the sides of the mould.
- Place the bananas on top of the caramel, filling the entire bottom of the pan.
- Continue pre-preparation (step 2).
Caramelized banana cake:
- Cut the remaining banana into slices or mince.
- Blend the banana, eggs, oil, yogurt or milk, vanilla essence and sugar in a blender until you obtain a smooth cream.
- Reduce the blender speed and add the breadcrumbs.
- Finally add the yeast.
- If your blender doesn’t have the power needed to beat the flour and yeast, finish this step in a bowl, mixing everything very well.
- Pour the cake batter into the caramelized pan with the bananas.
- Place in a preheated oven at 180°C and cook for 20 minutes or the time needed to cook the cake; this time may vary depending on your oven, the pan chosen and the final height of the cake (which in this recipe must be thin), to look like a cake).
- To confirm whether the cake is cooked, do the toothpick test, if it comes out dry it is ready, otherwise continue until completely cooked.
- Remove from the oven and place the pan, still with the cake inside, on a low heat, with a flame that can cover most of the bottom of the pan.
- Check if the caramel has “released” by slightly lifting one side of the cake. If so, you’re ready to flip.
- Turn the cake while it is still hot and let the caramel drip a little. Then transfer to a serving plate.
FINALIZATION AND ASSEMBLY:
- Serve the banana cake hot or cold, it is even better accompanied by cream or cinnamon ice cream.
