Ingredients:

  • 1 sachet of dry yeast (10g)
  • 1 1/2 cups (tea) warm water
  • 2 tablespoons softened butter
  • 3 tablespoons of honey
  • 2 tablespoons cocoa powder
  • 3 tablespoons of brown sugar
  • 1 teaspoon of salt
  • 1 cup wholemeal flour (tea)
  • 3 cups wheat flour (approximately)
  • Greasing oil
  • Corn flour for dusting

Preparation method:

  1. In a bowl mix the yeast, water, butter, honey, cocoa, sugar and salt
  2. Add the flour and mix until a smooth, soft dough forms that does not stick to your hands.
  3. If necessary, add more wheat flour
  4. Knead the dough for 5 minutes, cover and then leave to rest for 20 minutes
  5. Form the dough into 2 long loaves and place them in a large greased baking tray.
  6. Sprinkle with cornmeal, cover and let rest for another 40 minutes
  7. With a sharp knife, make transversal cuts on the bread.
  8. Bake in preheated medium oven for 35 minutes or until golden brown.
  9. Leave to cool and, if desired, serve with butter.

Ingredients:

  • 4 cups wheat flour (approximately)
  • 1 1/2 cups (tea) warm water
  • 2 tablets of organic fresh yeast (30g)
  • 1 tablespoon of sugar
  • 1 teaspoon of salt
  • 2 eggs
  • 1/2 cup (tea) oil
  • Wheat flour for flouring and dusting
  • Margarine for greasing

Preparation method:

  1. Sift the flour into a bowl and make a well in the centre.
  2. Blend the rest of the ingredients in a blender and pour over the flour, mixing with a spoon.
  3. Transfer it to a lightly floured surface and knead for a few minutes until it forms a smooth dough that doesn’t stick to your hands.
  4. If necessary, add more flour
  5. Cover and let rest for 30 minutes
  6. Divide the dough into 2 parts, knead for 3 minutes and form 2 balls.
  7. Arrange the loaves in a greased and floured baking pan, one next to the other, cover and then leave to rest for another 30 minutes.
  8. Make shallow scratches on the dough, sprinkle with flour and bake in a medium preheated oven for 40 minutes or until cooked through and golden.
  9. Let it cool and then serve.

Ingredients:

  • 1 1/2 cups warm milk
  • 3 tablets of organic fresh yeast (45g)
  • 1 tablespoon of salt
  • 2 tablespoons of sugar
  • 2 tablespoons margarine
  • 3 eggs
  • 1 cup cooked and mashed cassava
  • 4 cups wheat flour (approximately)
  • Margarine and wheat flour for greasing
  • 1 egg yolk for brushing

Preparation method:

  1. Blend the warm milk, yeast, salt, sugar, margarine, eggs and cassava in a blender until smooth
  2. Transfer it to a bowl and add the flour, little at a time, kneading until it no longer sticks to your hands.
  3. If necessary, add more flour
  4. Knead for 5 minutes, cover and then leave to rest for 30 minutes
  5. Divide the dough into 2 parts and form two round loaves.
  6. Place them on a greased and floured baking tray, one next to the other, leaving space between them.
  7. Cover and let rest for another 30 minutes
  8. Brush with beaten egg yolk and bake in a preheated medium oven (180ºC) for 35 minutes or until golden brown.
  9. If desired, serve immediately with ricotta.

Sesame seed bread

Ingredients:

  • 1 tablespoon dry yeast
  • 1 cup (tea) warm water
  • 2 tablespoons honey
  • 1 level tablespoon of salt
  • 2 tablespoons sesame oil
  • 1 cup and 1/2 cup (tea) wheat flour
  • 1 cup and 1/2 cup (tea) whole wheat flour
  • 1/4 cup sesame seeds
  • 1 egg yolk for brushing

Preparation method:

  1. In a blender, blend the yeast, water, honey, salt and sesame oil
  2. Pour into a bowl and leave to rest for 10 minutes
  3. Add the wheat flour, the wholemeal flour, half the sesame seeds and knead the dough for 20 minutes.
  4. Form rolls, place them on a greased baking tray, brush them with the egg yolk, sprinkle with the remaining sesame seeds and then leave to rise for 1 hour or until they double in volume.
  5. Bake in a preheated medium oven for 15 minutes or until golden brown.
  6. Remove from the oven, let cool and then serve.

Gluten-free rice bread

Ingredients:

  • 1 cup uncooked rice, washed and drained
  • 4 eggs
  • 1 cup milk (tea)
  • 1/2 cup (tea) oil
  • 1 teaspoon of salt
  • 1 tablespoon of yeast
  • Greasing oil

Preparation method:

  1. Place the rice in a bowl, cover with water and leave to macerate for 4 hours
  2. Drain and then blend the rice in the mixer with the eggs, milk, oil, salt and yeast until a smooth mixture is obtained.
  3. Transfer to a greased medium English cake pan and bake in a preheated medium oven (180ºC) for 35 minutes or until golden brown.
  4. Leave to cool, remove from the mold and serve immediately.
