cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Ingredients Gluten-free almond biscuits

– 100 g of almond flour (or flaked almonds)

– 125 g of unsalted butter

– 40 g of potato starch

– 25 g of rice flour

– 1/2 spoon(s) of powdered milk

– 2 1/2 tablespoons demerara sugar (or sugar)

– salt to taste (pinch)

– vanilla essence to taste

Ingredients To finish

– demerara sugar to taste, for sprinkling. (or sugar)

PREPARATION:

  1. Separate the ingredients and utensils for the recipe.
  2. Line the baking trays with baking paper (1 tray for every 2 portions) or use silicone mats.
  3. If you don’t use almond flour, grind the almonds into small particles (a little coarser than flour).
  4. Sift the sugar.

PREPARATION:

Gluten-free almond biscuits:

  1. In the food processor, or bowl, mix the almond flour, sugar, salt, milk powder and almond essence.
  2. Add the cold cubed butter, beat or knead with your hands.
  3. Finally add the flour.
  4. Whisk or knead to mix well.
  5. Adjust the consistency of the dough: add a little more flour if it is too sticky or add a little water if the dough is too dry.
  6. Make rolls with the dough with a diameter of 2 cm. Cut into 1cm slices.
  7. Take each “slice” and press it into thin, round biscuits.
  8. Cut the biscuits using a floured cutter of your choice. An alternative is to cut with coffee cups.
  9. To prevent them from deforming, cut the biscuits into the molds and eliminate the excess from the walls.
  10. Sprinkle sugar over biscuits.
  11. Refrigerate for 15 minutes to ½ hour.
  12. Preheat the oven to 165°C.
  13. Bake for 15 minutes or until evenly browned.
  14. Remove from oven and carefully remove from pans.
  15. Leave to cool on a wire rack (optional).

FINALIZATION AND ASSEMBLY:

  1. Once they are cold, store them in an airtight container.
  2. Serve with coffee or tea, it’s delicious.
