Ingredients:

  • 2kg pork loin
  • 1/2 bottle of dry white wine
  • Juice of 2 lemons
  • Salt and black pepper to taste
  • 2 bay leaves
  • 2 chopped onions
  • 1/2 cup chopped green chili pepper
  • 1/2 cup (tea) oil
  • Sicilian lemon and rosemary to decorate

Preparation method:

  1. Using a knife, poke holes in the loin and place in a bowl.
  2. Season with the other ingredients, cover with cling film and then leave in the fridge for 2 days, turning the seasoning every 6 hours.
  3. Put the oil in a pressure cooker and add the loin, keeping the seasoning.
  4. Bring to the boil and fry on all sides for 10 minutes or until golden brown.
  5. Add the seasoning, cover the pan and cook for 30 minutes after turning on the pressure.
  6. Turn off the heat, remove the pressure and leave over medium heat with the pan uncovered for another 15 minutes, stirring occasionally, or until softened and dry.
  7. Decorate with lemon and rosemary and then serve sliced.
