Ingredients:
- 2kg pork loin
- 1/2 bottle of dry white wine
- Juice of 2 lemons
- Salt and black pepper to taste
- 2 bay leaves
- 2 chopped onions
- 1/2 cup chopped green chili pepper
- 1/2 cup (tea) oil
- Sicilian lemon and rosemary to decorate
Preparation method:
- Using a knife, poke holes in the loin and place in a bowl.
- Season with the other ingredients, cover with cling film and then leave in the fridge for 2 days, turning the seasoning every 6 hours.
- Put the oil in a pressure cooker and add the loin, keeping the seasoning.
- Bring to the boil and fry on all sides for 10 minutes or until golden brown.
- Add the seasoning, cover the pan and cook for 30 minutes after turning on the pressure.
- Turn off the heat, remove the pressure and leave over medium heat with the pan uncovered for another 15 minutes, stirring occasionally, or until softened and dry.
- Decorate with lemon and rosemary and then serve sliced.
