Ingredients for the sweet potato omelette

  • 4 eggs
  • 1 cup diced cooked sweet potatoes
  • 1/2 cup kale, thinly sliced
  • 1 seedless tomato chopped
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Preparation method

In a bowl, beat the eggs with a fork until smooth. Add the potato, cabbage and tomato. Season with salt and pepper.

In a medium nonstick skillet, heat the olive oil over medium heat and pour in the eggs. Leave it to cook for 5 minutes on each side, over low heat, or until it is no longer raw. Serve immediately.
