CAULIFLOWER RICE Ingredients:
– 60 g of unsalted butter, for the frying
– 700 g of fresh cauliflower (cannot be frozen)
– 2 teaspoons of turmeric (optional) w
– 1 cup(s) boiling water (plus a little if needed)
– Salt to taste
PREPARATION:
1. Boil a kettle with water (see quantities in the ingredients).
2. Divide the cauliflower (florets and stems), wash it and dry it with absorbent paper.
3. Process the raw cauliflower (florets and stems) in a food processor using the pulse function, until small pieces remain that look like ‘grains of rice’ – don’t over process them or they will turn into crumbs.
4. Separate other ingredients and utensils from the recipe.
PREPARATION:
Cauliflower rice:
1. In a pan, melt the butter.
2. Add the processed cauliflower and turmeric (optional).
3. Brown over medium heat for 3 minutes and add salt and pepper.
4. Add the boiling water (see quantities in the ingredients) and cook for about 5 minutes.
5. When it is cooked, turn off the heat and drain it.
FINALIZATION AND ASSEMBLY:
1. Place the cauliflower rice on a serving plate or, if you prefer, divide it on one side of the plates, next to your main course.
