Ingredients SPONGE CAKE/POTATO STARCH BREAD
– 3 units of eggs – whites and yolks separated
– 125 g of sugar, sifted
– 2 tablespoons of potato starch, sifted
– 1/2 tablespoon(s) of chemical yeast THE

– oil to taste
PREPARATION:
- Separate the utensils and ingredients for the recipe.
- Preheat the oven to 180°C.
- For 1 entire recipe (4 portions), use one or more baking trays, lined on the bottom with baking paper. Grease the baking paper and edges with oil.
- Separate the egg whites and yolks into bowls.
PREPARATION:
PREPARATION OF THE DOUGH – Starch cake/sponge cake:
- Beat the egg whites until stiff.
- Sift the sugar and add it together with the egg yolks, beating until a light and fluffy cream forms.
- Sift the potato starch and yeast, gently incorporating them into the mixture with a spatula.
Starch cake/sponge cake – COOKING:
- Pour the mixture into the greased/dusted lined baking tray(s).
- Bake for about 30 minutes in a preheated oven at 180°C, or until a toothpick inserted into the center comes out clean.
- Leave the cake to cool in the pan(es) for a few minutes.
- Remove from the mold and leave to cool completely on a wire rack.
FINALIZATION AND ASSEMBLY:
- after starch cake/sponge cake cool it completely, with the help of a serrated knife cut it into equal parts to fill it.
- Fill and decorate as desired.
