Italian restaurant owner Giuseppe has warned shoppers to avoid buying mozzarella in completely transparent packaging because bright supermarket lights can spoil the cheese. Writing for Hungarian news website kertvar.hu, the restaurateur explained that packaging plays a critical role in preserving the quality of fresh cheese.

Most consumers focus primarily on price, brand names, and sell-by dates when purchasing mozzarella. However, Giuseppe advised that light exposure can rapidly degrade the delicate dairy product while it sits on store shelves.

Mozzarella is a traditional Italian fresh cheese valued for its high moisture content and soft texture. Because fresh cheeses lack the natural preservatives formed during hard cheese aging, they remain vulnerable to light and temperature changes.

Light oxidation hazards

Light entering clear plastic containers triggers oxidation in the fats present in fresh mozzarella. This chemical reaction alters the organoleptic properties of the cheese, damaging both its flavor and smell. Bright display lights in supermarket refrigerated cases accelerate this breakdown when products are stored for extended periods.

Exposure to light can also cause certain light-sensitive nutrients inside the cheese to lose their stability. To prevent these issues, Giuseppe recommended selecting packaging that offers better protection against light.

Identifying quality mozzarella

Quality fresh mozzarella should feel soft, elastic, and moist, retaining its moisture even after being sliced. The cheese typically features a mild, milky taste, though it can sometimes have a slightly acidic tang.

Mozzarella kept in brine or whey preserves its characteristic hydration, texture, and freshness far more effectively. Consumers should also inspect the product upon opening, taking an unpleasant odor or an extremely slimy surface as warning signs of spoilage.

Storing leftover cheese

Shoppers who do not consume an entire ball of mozzarella at once should keep the liquid provided in the original packaging. Transferring the remaining cheese into a tightly sealable container with its original fluid prevents the mozzarella from drying out.

If the packaging liquid has already been poured away, placing the leftover cheese in slightly salted water provides a suitable alternative for maintaining moisture.
