Russian news outlet Lenta.ru published a guide on September 10 detailing six top apple povidlo recipes alongside cooking techniques for ovens and microwaves.

The outlet reported that apple povidlo contains abundant pectin, fiber, and vitamins that support intestinal health, strengthen immunity, and improve skin and hair condition.

Povidlo is a traditional Eastern European fruit preserve made by extended boiling of pureed fruit with sugar until it reaches a thick, gel-like consistency. Unlike traditional fruit jam with whole fruit pieces or softer spreads, povidlo is cooked until a spoon stands upright in the mixture.

According to Lenta.ru, home cooks use povidlo as a stable filling for pies, pirozhki, puff pastries, buns, and pancakes because it holds its shape without leaking during baking or softening the dough. The preserve is also spread on toast, added to porridge, yogurt, and cottage cheese casseroles, used as a base for pork and duck sauces, and applied in confectionery as a cake layer or candy filling.

Best apple varieties for making povidlo

Lenta.ru noted that sour or sweet and sour apple varieties with high pectin content work best for making povidlo, as acid and sugar react with pectin to form a dense mass. The outlet highlighted Antonovka Obyknovennaya for its bright sour taste and high yield, Idared for its sweetness with a grassy sourish aftertaste, Bely Naliv as an early ripening variety with a sour-sweet flavor and short shelf life, and Jonathan for its sweet flavor with a sourish note. Conversely, sweeter varieties such as Golden or Fuji often produce a runny preserve that fails to set properly.

The classic recipe published by Lenta.ru requires 1 kilogram of apples, 600 to 800 grams of sugar, and 1 glass of water. To prepare it, wash the apples, remove the cores, and slice them into wedges.

Place the sliced apples into a jam basin or pot, add the water, and cook over medium heat until the apples soften completely and mash easily. After cooling slightly, pass the fruit mass through a fine sieve to create a smooth puree, discarding the remaining skins and seeds.

Add the sugar to the puree, stir thoroughly, and cook over low heat while stirring constantly until the mixture thickens and separates easily from the pot walls. Pour the hot povidlo into sterilized jars, cool at room temperature, seal with lids, and store in a dark, cool place.

Lenta.ru reported that adding mint creates a light cooling effect, while lemon juice enhances sourness and helps the preserve set. This recipe requires 1.5 kilograms of apples, 1 kilogram of sugar, 3/4 glass of water, the juice of half a lemon, and 1 bunch of fresh mint.

Wash, core, and slice the apples, then boil them with water in an enameled pot under a lid until soft. Press the cooled apples through a sieve to produce a smooth puree before transferring it to a clean pot with the sugar and whole sprigs of mint.

Simmer over low heat while stirring regularly. Remove the mint sprigs five minutes before finishing, stir in the lemon juice, pour the hot povidlo into sterile jars, seal, and cool at room temperature before storing in a dark, cool space.

According to Lenta.ru, ground cinnamon or whole cinnamon sticks add warm, spicy notes to the preserve. The ingredients include 1.5 to 2 kilograms of apples, 700 to 800 grams of sugar, 100 to 150 milliliters of water, 1 teaspoon of ground cinnamon or 2 cinnamon sticks, and an optional 2 tablespoons of lemon juice.

Boil the washed, cored, and sliced apples in a thick-bottomed pot with water for 10 to 15 minutes under a lid until soft. Puree the mixture using an immersion blender or sieve, then stir in the sugar and cinnamon.

Simmer over low heat for 25 to 40 minutes with regular stirring until thick. If using cinnamon sticks, remove them before bottling. Add the optional lemon juice five minutes before the end of cooking to refresh the flavor and assist setting, then pour into sterilized jars, seal, invert, wrap in a blanket, and cool completely.

For a microwave preparation, Lenta.ru listed 1 kilogram of apples, 200 milliliters of water, and an optional 200 grams of sugar. Wash, quarter, and core the apples before placing them into a microwave-safe dish.

Bake the apples in the microwave at maximum power for 25 minutes until soft. Cool slightly, pass through a fine sieve to make a smooth puree, return to the dish with the water, mix well, and level the surface.

Microwave again at maximum power for 30 to 40 minutes, stirring every 10 minutes. If sugar is desired, stir it in 10 minutes before completion until fully dissolved, then transfer the finished povidlo into sterilized jars, cool, and refrigerate.

Lenta.ru explained that slow, even simmering in an oven cooks the apple mass without burning, producing a thick, amber preserve suitable for winter storage. The recipe uses 1.5 kilograms of apples, 600 to 700 grams of sugar, and 250 to 300 milliliters of warm water.

Wash and core the apples, slice each into 4 to 8 parts, and cut into thin slices. Combine the apples and warm water in a wide, thick-bottomed pot or kazan, cover, bring to a boil over medium heat, and simmer for 30 to 45 minutes until soft.

Blend the mixture with an immersion blender or press through a metal sieve with a wooden pusher for a smoother texture. Dissolve the sugar into the puree, place the pot in an oven preheated to 200 degrees Celsius, and lower the temperature to 110 degrees Celsius once boiling. Simmer for 1.5 to 2 hours while stirring gently with a wooden spoon every 25 to 30 minutes. Fill sterilized jars to the brim with hot povidlo, seal tightly, invert, cover with a blanket, and cool for 24 hours.

Lenta.ru noted that confiture differs from standard povidlo because the fruit pieces are cooked in syrup rather than reduced as a plain puree. The recipe requires 1.5 kilograms of apples, 300 milliliters of apple juice, 1 kilogram of sugar, 2 lemons, 100 milliliters of water, 2 cinnamon sticks, and 4 to 5 clove buds.

Peel, core, and slice the apples, then toss them with the juice of one lemon and let stand for 5 to 10 minutes. In a separate pot, boil the apple juice, water, and sugar together until the sugar dissolves completely.

Pour the hot syrup over the apples, add the cinnamon sticks and the juice of the second lemon, bring to a boil over high heat, and cook for 5 minutes while skimming off foam. Remove the apples with a slotted spoon, boil the remaining syrup for another 10 to 15 minutes to thicken, reintroduce the apples with the cloves, and cook for an additional 5 minutes.

Pour the hot confiture into sterilized jars and let cool uncovered under a clean towel at room temperature. Once warm, seal the jars with sterilized lids.

To verify if povidlo is fully cooked, Lenta.ru advised dropping a small amount of hot preserve onto a cold saucer. If the drop sets into a firm, non-spreading mass after a few seconds, the povidlo is ready; if it spreads, continue cooking for 10 to 15 minutes before retesting. Fully cooked povidlo also separates easily from the pot sides and forms a clump when stirred.

Properly prepared apple povidlo can be stored for up to two years, though consumption within the first year is recommended. Ideal storage conditions include a dark, dry cellar maintained between 5 and 15 degrees Celsius. In an apartment, jars should be kept in a cupboard at room temperature away from radiators and heat sources. Once opened, jars must be refrigerated and consumed within two to three weeks, using a clean, dry spoon for each serve.
