Vegan carbonara pasta recipe

Ingredients:
- 300 g of gluten-free pasta
- 200 g of fresh mushrooms
- 2 tablespoons of extra virgin coconut oil or extra virgin olive oil
- 1 teaspoon smoked paprika
- 1 tablespoon nutritional yeast
- finely chopped parsley to taste
- pepper to taste
- nutmeg to taste
Method of preparation:
- Start by cleaning and disinfecting the mushrooms.
- Immediately afterwards, chop the mushrooms well and mix them in a bowl with the paprika, baking powder and coconut or olive oil.
- Then put it in a pan and bring it over medium heat, about 10 minutes. Tip: Avoid mixing too much so that the mushrooms do not release too much water, they must be crunchy.
- In the meantime, cook the pasta and drain the water well.
- Remove the mushrooms from the pan and set them aside.
- In this same pan, put the already cooked pasta, using the remaining sauce.
- Finally add parsley, nutmeg, chilli pepper and finish with the mushrooms.
