Vegan carbonara pasta recipe

Ingredients:

  • 300 g of gluten-free pasta
  • 200 g of fresh mushrooms
  • 2 tablespoons of extra virgin coconut oil or extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 1 tablespoon nutritional yeast
  • finely chopped parsley to taste
  • pepper to taste
  • nutmeg to taste

Method of preparation:

  1. Start by cleaning and disinfecting the mushrooms.
  2. Immediately afterwards, chop the mushrooms well and mix them in a bowl with the paprika, baking powder and coconut or olive oil.
  3. Then put it in a pan and bring it over medium heat, about 10 minutes. Tip: Avoid mixing too much so that the mushrooms do not release too much water, they must be crunchy.
  4. In the meantime, cook the pasta and drain the water well.
  5. Remove the mushrooms from the pan and set them aside.
  6. In this same pan, put the already cooked pasta, using the remaining sauce.
  7. Finally add parsley, nutmeg, chilli pepper and finish with the mushrooms.
  8. Ok, now enough serving!
