The traditional recipe, for happy hour, grilled or feijoada, healthier, to be cooked instead of fried

- TOOLS: 1 chopping board, 1 grater, 1 milk jug, 1 bowl, 1 baking tray, 1 deep or frying pan, 1 or more trays.
- EQUIPMENT: conventional + processor (optional) with coarse grating blade.
Tapioca Daddies Ingredients:
- 250 g of granulated tapioca
- 250 g of coarsely grated ricotta
- 500 ml of heated whole milk
- salt
- corn oil for greasing
Ingredients to accompany:
- Honey to taste (optional)
- pepper jelly (optional)
- Other of your choice (optional)
PRE-PREPARATION:
- Separate recipe ingredients and utensils.
- Prepare a baking sheet for placing the dough, grease it with oil and cover it with cling film.
- Grate the coalho cheese (thick) on the grater or using a food processor.
- Put the milk with a little salt in a milk jug and heat it over high heat, without letting it boil.
- If baking, separate the shapes — you may need more than one since the cubes can’t overlap. Drizzle them with oil and set aside.
PREPARATION:
Tapioca Daddies – Dough:
- In a bowl, mix the grated coalho cheese with the granulated tapioca.
- Pour the hot milk over the tapioca and coalho cheese mixture.
- Wait a few minutes for the tapioca to absorb all the milk.
- Place the still warm dough in the tray lined with cling film (choose the correct size tray so that the dadinho dough is 2cm high).
- Take the dough into the freezer for 1 hour or until very firm.
- Remove from the freezer and unmold onto a cutting board.
- Cut into 2x2cm squares.
Tapioca Daddies – Bake:
- Preheat the oven to 220°C.
- Put the dice without overlapping them in the greased moulds.
- Place in a preheated oven and bake for 15-25 minutes.
- Halfway through that time, it turns brown on the other side.
- When they are browned on all sides, remove from the oven and switch off.
Tapioca Daddies – Freeze:
- To freeze, after having cut them into squares, place them on one or more trays lined with transparent film, without overlapping them.
- Take it to the freezer until the dadinhos are well frozen.
- Transfer to a plastic bag, remove air, and freeze.
Tapioca Daddies – Frozen Flan:
- Preheat the oven to 180°C.
- Put the dice without overlapping them in the greased moulds.
- Place in preheated oven and cook for 5 minutes, or enough time to defrost.
- Raise the temperature to 220°C.
- Repeat the remaining steps of the to roast previously described from here.
FINISHING AND ASSEMBLY:
- Serve the dadinhos piping hot.
- Accompany with sugar factory honey, chilli pepper jelly or anything else of your choice.
