Charlotte

Apple Charlotte is the most popular homemade pie and is quite easy to make. The classic charlotte that we are used to was invented by the British, but now it is baked all over the world. A fluffy, slightly moist sponge cake with tart apples is a great dessert that can be topped with vanilla ice cream.

Ingredients:

  • chicken egg – 4 pieces;
  • sugar – a glass;
  • wheat flour – a glass;
  • apples – 1 kg;
  • salt – on the tip of a knife;
  • soda – 1/2 tsp.

Cooking method

Combine egg whites and half a cup of sugar in a bowl. In another bowl, beat the yolks with the rest of the sugar. The more you beat them, the fluffier the cake will be. Mix and gradually add the sifted flour, salt and soda. Then cut the apples into small cubes and mix them into the dough. Grease a baking dish with butter and pour the dough into it. If you wish, you can decorate the top of the pie with apple slices. Place in preheated oven at 180 degrees for 30 to 40 minutes. After cooking, it is advisable to sprinkle the charlotte with icing sugar.

cottage cheese cake

Historically, cottage cheese cake was eaten at a wedding. Today it is prepared by many housewives as breakfast or as a treat for tea. Two options are considered standard – with and without raisins. But there is only one recipe, whether you decide to add raisins or not.

Ingredients

  • cottage cheese – 250 g;
  • wheat flour – 300 g;
  • chicken egg – 3 pieces;
  • sugar – 200 g;
  • butter – 100 g;
  • soda – a teaspoon.

Cooking method

Butter at room temperature with sugar. Add beaten eggs, cottage cheese, extinguished soda and sifted flour. Mix everything well. Put the finished mass in a mold greased with butter and bake at a temperature of 180 degrees for about an hour. Check the readiness with a toothpick – pierce the cake with it (if the toothpick remains dry, the cake is ready).

Creamy cookies with dragees

Homemade cookies have many benefits. First, you know exactly what it’s made of. Second, its preparation is a great opportunity to have fun with the family. Many children like to cut shapes out of the dough.

Ingredients

  • butter – 110 g;
  • flour – 1/3 tbsp;
  • sugar – glass
  • chicken egg – 1 pc.;
  • vanillin – a pinch;
  • baking powder – 1/2 tsp;
  • dragee.

Cooking method

Bring half the butter to a boil in a saucepan and simmer to evaporate the excess liquid. Then remove the pan from the heat and pour in the remaining oil. Melt it and cool the mixture slightly, then pour the sugar into it. Then, using a mixer, start mixing by adding the egg, sifted flour, baking powder and salt. Lubricate your hands with vegetable oil and form small balls from the dough. Place them on a plate covered with parchment paper and decorate them with dragees by pressing them into the dough (so that the candies are inside). Bake at 180 degrees for 8-10 minutes.

Apple pies

Homemade pies, as you know, do not stay on the table for long. And if they are with apples, then all family members will definitely like them. There are many options for pies – open, closed, round, triangular, multi-layered, etc. We decided to cook a classic version with filling inside.

Ingredients

  • wheat flour – 390 g;
  • milk – 200 ml;
  • yeast – 10 g;
  • butter – 100 g;
  • chicken egg – 2 pieces;
  • sugar – 1.5 tbsp. I. ;
  • salt – 1/4 tsp;
  • apples – 4 pieces;
  • sugar for the filling – 2 cl

Cooking method

Wash and cut the apples into small cubes, removing the core. Then melt the butter in a frying pan, add the sugar to it, mix and put the apples. Reduce the heat and sauté the apples for 5-7 minutes. The filling is ready. While it cools, let’s make the dough. Combine sifted flour, eggs, salt and sugar in a bowl. In the other, mix the lukewarm milk, the yeast and the sugar and put in the heat. After an hour, mix the fermented yeast with a mixture of flour and eggs, knead the dough thoroughly and put it in a warm place for another hour (this procedure can be repeated several times). Divide the dough into equal pieces, roll them out with a rolling pin and leave for 10-20 minutes to rise slightly. Then place the apple filling in the center of each circle and close each pie tightly. Place on a baking sheet lined with parchment paper and brush each tart with egg yolk. Bake at 200 degrees for about half an hour.

Cinnamon and sugar buns

Many people know these rolls as Estonian – it is believed that they come from the Baltic countries. They are also called the Estonian crown or the pretzel for the twisted shape of the buns. In Russia, they like to add sugar and cinnamon to the dough, so our housewives liked the recipe.

Ingredients

  • baked milk – 120 ml;
  • sugar – teaspoon;
  • egg yolk – one;
  • butter – 30 g;
  • salt – a pinch;
  • flour – 300 g;
  • yeast – 15 g.

Besides

  • butter – 50 g;
  • sugar – 4 cl;
  • cinnamon – 1 tsp

Cooking method

Dilute the yeast in warm milk, add sugar to it and put it in a warm place for an hour. At this point, melt 30 g of butter and beat it with the egg yolk. Add flour, salt and fermented yeast to this mass, which we put in a warm place. Knead the dough well and send it again to a warm place, now for 2-3 hours. Meanwhile, mix 50g butter, cinnamon and 4 tbsp sugar until smooth. Now roll out the risen dough with a rolling pin (it should be about 1 cm thick). Lubricate it with a mixture of cinnamon and roll it into an elastic roll. Cut the twisted roll in half lengthwise, without cutting the ends. Then you have to twist both ends to get a vicious circle. Put on a baking sheet covered with parchment paper and put in the oven for 25 minutes at a temperature of 200 degrees. In the last 10 minutes, you can lower the temperature to 180 degrees.

Muffins

Chocolate muffins or cupcakes are enjoyed by adults and children alike. If you think they can only be cooked in cafes, you are sadly mistaken. We found an easy recipe!

Ingredients

  • cocoa – 60 g;
  • sugar – 190 g;
  • baking powder – 8 g;
  • milk – 150 ml;
  • chicken eggs – 2 pcs.
  • butter – 60 g;
  • milk chocolate – 100 g;
  • wheat flour – 200 g.

Cooking method

In a bowl, combine the eggs, milk and melted butter. Separately mix flour, baking powder, cocoa and sugar. Mix the dry and wet ingredients. Spread the dough into molds (if you have disposable paper molds, you don’t have to do anything with them, but grease the metal or silicone ones with butter). Bake the muffins for 15 minutes at 180 degrees.

Baba

Rum baba has been prepared since the 17th century. It is said to be a festive Austrian bread recipe modified by the King of Poland. Today, you can find a cake soaked in cognac or rum in Russian bakeries and French pastry shops.

Ingredients

  • butter – 60 g;
  • chicken egg – one piece;
  • wheat flour – 125 g;
  • milk – 50 ml;
  • powdered sugar – 5 g;
  • yeast – 7.5 g;
  • raisins – 60 g;
  • rum – 25 ml.

Impregnation ingredients

  • rum – 10 ml;
  • sugar – 125 g;
  • water – 250 ml.

For the caramel

  • sugar – 120 g;
  • water – 160 ml;
  • citric acid – 1 g.

Cooking method

Pour the rum raisins and leave for 60 minutes. At this time, mix the yeast with the powdered sugar and warm milk until smooth. From a beaten egg, flour and a milk-yeast mixture, knead a soft dough. Add the melted butter to the dough. Add the raisins and mix well. Leave the mixture in a warm place for 40 minutes. Lubricate the cupcake molds with butter and put the finished dough in them, filling them 2/3 full and leave in a warm place for another 30 minutes. Then put them in a preheated oven at 200 degrees for 20-25 minutes. At this time, prepare the impregnation. To do this, boil the syrup of sugar and water. Let it cool slightly and add rum to it. Now prepare the fudge. Put the sugar in a saucepan, add water and keep stirring on the glass until you get a soft ball. Then add citric acid to it. By consistency, you should get thick sour cream. You can go to the final. Put the finished rolls on the wire rack, impregnate the fields and grease with fudge (if frozen, reheat).
