A delicious roasted tomato sauce, real red and enriched with all the nutrients of the beetroot

INGREDIENTS:
Homemade tomato sauce (and vitamins):
- 10 units of very ripe large Italian tomatoes, cut into medium cubes
- 2 units of red onion, peeled and quartered.
- 8 lightly crushed unpeeled garlic cloves
- 1/2 medium beetroot (optional)
- 8 tablespoons of olive oil
- 2 cups basil (leaves)
- salt and pepper

PRE-PREPARATION:
- Preheat the oven to 220ºC. Toss a roast with olive oil.
- Put the tomatoes in the oven for the sauce (see preparation)
- Separate recipe ingredients and utensils.
PREPARATION:
Roasted Tomato Sauce (this step must be done before starting the pre-preparation):
- Wash the cherry tomatoes and cut the tomatoes into quarters.
- Remove the whites from the tomatoes, cut into medium cubes and arrange in a single layer on the greased baking sheet (do not overlap).
- Peel and cut the red onion. Crush the garlic. Wash the basil leaves well.
- Wash, peel and cut the beets into medium cubes (optional).
- Distribute the onion, garlic cloves and basil among the tomatoes. Add the beetroot cubes (optional).
- Drizzle with olive oil, season with salt and pepper
- Bake in a preheated oven at 220ºC for 25 minutes, or until the tomatoes are wilted and the beets are cooked through.
- Continue pre-preparation.
Homemade tomato sauce (and vitamin)
- Remove the pan from the oven and sprinkle with a little filtered water, rubbing with a spatula to take advantage of all the waste from the pan.
- Pass the tomatoes and the other ingredients, preferably through a sieve or with a vertical vegetable mill. The sauce can also be pureed in a blender, but it will lose its red color and become more orange.
- If the sauce gets too thick, add a little more filtered water.
- Put the roasted tomato sauce in a pan, heat until it starts to boil.
FINISHING AND ASSEMBLY:
- When ready to serve, if you are preparing the pasta, put the pasta in the sauce pan, mix well.
- Decorate the main dish topped with the sauce with basil leaves.
