Ingredients:

  • 2 small eggs
  • 8 tablespoons (tablespoons) of sugar
  • 4 tablespoons of concentrated passion fruit juice
  • 3 tablespoons of mayonnaise
  • 8 tablespoons of wheat flour
  • 1 teaspoon (heaping) baking powder
  • Margarine and wheat flour for greasing

Syrup

  • Pulp of 1 passion fruit
  • 2 tablespoons of sugar
  • 2 tablespoons of water
  • 1/2 teaspoon cornstarch

Method of preparation:

  1. In a bowl put the eggs, sugar, juice and mayonnaise and mix well.
  2. Add the flour and baking powder and mix until smooth.
  3. Pour into 2 ceramic or glass cups, with a capacity of 300 ml, greased and floured.
  4. Microwave on full power for 3 minutes or until cooked through.
  5. Mix the syrup ingredients in a bowl and microwave on medium power for 2 minutes.
  6. Pour over the cakes and serve.

Ingredients:

  • 4 eggs
  • 1/2 cup margarine (tea)
  • 1 cup (tea) of sugar
  • 1 cup wheat flour (tea)
  • 1/3 cup milk (tea)
  • 1/2 cup cornstarch (tea)
  • 1 teaspoon(s) baking powder
  • Margarine and wheat flour for greasing

Syrup

  • 1/2 cup cream (milk)
  • 1/2 cup strawberry jam (tea)

Method of preparation:

  1. In a bowl, mix the eggs, margarine, sugar, flour, milk and cornstarch until smooth.
  2. Add the yeast and mix with a spoon.
  3. Pour the batter up to half the capacity of a 250ml greased and floured mixing bowl and microwave, on high, for 4 minutes or until the cake is golden brown and firm.
  4. For the syrup, put the cream and gelatine in a pan, cook over low heat for 3 minutes and stir until the mixture is smooth.
  5. Remove the pan from the heat and let it cool.
  6. Drizzle the cake with the syrup and serve, if desired, accompanied by strawberries.

  • 2 tablespoons of wheat flour

Method of preparation:

  1. In a bowl, mix all the ingredients with a wire whisk.
  2. Pour into a porcelain cup with a capacity of 300 ml and microwave at maximum power for 3 minutes.
  3. Decorate with the chopped banana and serve.

  • 2 small eggs
  • 1 cup (tea) of powdered sugar
  • 1/2 glass of coconut milk (100 ml)
  • 2 tablespoons of margarine
  • 10 tablespoons of wheat flour
  • 1 teaspoon (heaping) baking powder
  • Margarine and wheat flour for greasing

Syrup

  • 1/2 glass of coconut milk (100 ml)
  • 5 tablespoons of milk
  • 3 tablespoons of sugar
  • 50 g of grated coconut

Method of preparation:

  1. In a bowl, beat the eggs with the sugar for 3 minutes or until doubled in volume.
  2. Add coconut milk, margarine, sifted wheat flour and mix until smooth.
  3. Add the yeast and mix.
  4. Pour into 4 greased and floured ovenproof cups with a 300ml capacity, arrange on a baking sheet and place in the preheated medium oven for 15 minutes or until risen and lightly browned.
  5. Remove from the oven and leave to cool.
  6. For the syrup, in a skillet, bring the coconut milk, milk, sugar, and shredded coconut over medium heat.
  7. Bring to a boil and cook for 3 minutes.
  8. Pour into the cold cakes, without unmolding, and serve.

Lemon and orange mug cake

  • 1 egg
  • 4 tablespoons of sugar
  • 2 spoons of Sicilian lemon juice
  • 2 tablespoons of oil
  • 4 tablespoons of wheat flour
  • 1 teaspoon Sicilian lemon zest
  • 1/2 teaspoon baking powder
  • Sicilian lemon zest for dusting

Filling

  • 1/2 can of condensed milk
  • 1 tablespoon of butter
  • 1 teaspoon of orange essence
  • 1 tablespoon of orange zest

Method of preparation:

  1. For the filling, bring the condensed milk, butter, essence and zest over medium heat, stirring constantly until thickened.
  2. Turn off and reserve.
  3. For the cake, beat all the ingredients until smooth.
  4. Pour into a large mug and microwave for 3 minutes.
  5. Remove from the oven, make a hole in the center and fill with the orange cream.
  6. Then sprinkle with lemon zest to serve.
